<br />South Tyrol Moscato Rosa DOC<br /><br />A rare pleasure in a small edition<br /><br />Castel Sallegg and Moscato Rosa. These two terms have long belonged together in South Tyrol. Not without reason, it was the Princes of Campofranco, ancestors of the<br />current owner Count Georg von Kuenburg, who in 1892 brought this noble grape variety with them when they moved from Sicily to Sallegg Castle in Caldaro and planted it<br />in the warmest soil on Lake Caldaro, where it thrived magnificently. Today, the rose muscatel is one of the rarest varieties in the world. The Moscato Rosa of Castel Sallegg<br />grows at the Seehof in St. Josef am See at 230 m above sea level on the traditional pergola.<br /><br />The production of this wine is very limited: Depending on the weather, Moscato Rosa may not be bottled at all in certain years. Otherwise, up to 1,000 bottles are bottled per<br />vintage.<br /><br />Tasting Notes:<br />A dessert wine whose colour is characterised by a dense raspberry red.<br />On the nose, rich aromas of roses, fine fruit components distantly reminiscent of lychee and ripe, very complex raspberry flavours, supported by an elegant spiciness in<br />the background.<br />Very opulent, repeating the aromas of the fragrance, this powerful wine type presents itself on the palate.<br />Serving temperature: 10-14°C<br />Shelf life: Up to 30 years. Moscato Rosa is Castel Sallegg's most famous wine and, as a variety, is one of the rarest in the world.<br />Food recommendation: Ideal with mature, spicy cheeses, foie gras, desserts with berry fruits (but with sugar restrained). Also perfect as a stand-alone wine in the sense of<br />a meditation wine.<br />Grape variety: 100% Moscato Rosa - Selection Kuenburg: Autochthonous variety.<br />Site: Kaltern - Seehof: 230 m above sea level. Gravel and reddish, ground Grödner sandstone. Warm, air-permeable soils with a special microclimate in the immediate<br />vicinity of Lake Kaltern.<br />Growing system: Traditional pergola<br />Yield per vine: 0.5 kg - 8 hl/ha due to natural trickling.<br />Vinification: The grapes are harvested very late with a minimum gradation of 32°KMW (160 Öchsle). This is followed by a week of maceration in stainless steel tanks.<br />Maturation: 1 year in stainless steel barrels, followed by 12 months in the bottle.<br />Alcohol: 12,5 %<br />Acidity: 7,3 g/l<br />Residual sugar: 161,4 g/l<br />

An enduring finish goes hand in hand with silky tannins<br />that elevate the wine's elegance.<br />THE 2023 GROWING SEASON<br />2023 was a challenging vintage in Bolgheri that, however, benefitted from Nature's benevolence during key<br />moments of the growing season. Winter was mild with relatively high temperatures and average rainfall that<br />resulted in early plant growth. Spring brought abundant rainfall that helped fill up water reserves for the summer,<br />but which also called for meticulous work in the vineyard. A hot summer saw high temperatures, albeit without<br />reaching any extremes, alongside rains that helped offset water stress in the vineyards. This enabled the grapes to<br />ripen gradually and regularly, allowing the berries to achieve high concentration.<br />Rainfall in late August and cool September nights helped aromatic complexity development and preserved the<br />acidity of the wine, resulting in a proper balance between power and elegance.<br />V INIFICATION AND AGEING<br />The different varietals were fermented separately in small steel tanks to maintain their characteristics. The alcoholic<br />fermentation was followed by malolactic fermentation, again in steel tanks. The wine was then aged for 10 months,<br />partly in barriques used previously for Ornellaia and partly in concrete tanks, to obtain the perfect balance between<br />tannic structure and the expression of fresh fruit.<br />

Description:<br />Aroma of fully ripe wild berries and dark chocolate. Very dense and complex with fine tannins. Elegant Merlot with very good ageing potential.<br />Ageing potential: 6 - 8 years.<br />Recommended food: Goes well with hearty roasted or grilled meats with root vegetables and spicy dark sauces, as well as game dishes and cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Merlot. The grapes come from 20-year-old trellised vineyards with a planting density of approx. 5,000 vines/ha.<br />Sites: Sun-exposed slope. Extremely dry and heat-retaining quartz porphyry weathered soil that only allows low yields.<br />Vinification: Must fermentation at 28-30° C in stainless steel tanks. Gentle circulation of grape skins and juice is used to achieve optimal extraction of colour and extract<br />substances. Further ageing takes place entirely in small wooden barrels for about 12 months. After gentle filling and 12 months of bottle ageing, the wine is put on sale.<br />

Spumante D'Asti BERA 2024...
The grapes used to produce this finely aromatic Asti spumante come from Moscato bianco vineyards on soil rich in limestone. The continuous 'perlage' and persistent<br />foam are a prelude to the ample and intense perfume reminiscent of orange blossom and sage. The sweet and inviting flavour is tempered by a stimulating acidity. Ideal<br />with dessert, the wine of the party, as an aperitif and for any other occasion to remember.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west, with rows oriented to take full advantage of the sun's action on leaves and bunches.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: nr. 4000/5000 vines per hectare from 5 to 40 years.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun's action and encourage photosynthesis on<br />the leaves. A maximum of 8/9 fruit buds are left.<br />Harvest: 1st or 2nd decade of September, picked by hand.<br /><br />ORGANOLEPTIC DATA SHEET:<br />Denomination: Asti DOCG<br />Grape variety: White Muscat<br />Colour: more or less deep straw yellow colour.<br />Perlage: fine and persistent.<br />Bouquet: rich and intense fragrant aroma of Muscat grapes mixed with the scent of yeast and floral notes.<br />Taste: delicately sweet flavour, in harmony with the right acidity, moderate alcohol content and enlivened by the development of the mousse.<br />Serving suggestions: Serve chilled, 6-8°C on dessert, with various pastries, as an aperitif, as a thirst quencher at any time of day, but especially on any festive occasion.<br />

At about 100 m above sea level. The climate is characterized by a good thermal excursion between day and night.<br />Soil: Shallow and medium-fine texture<br />Harvest: August<br />Vinification: The grapes are destemmed and left in cryo-maceration for a few hours. The next step is the soft pressing of the pomace followed by a cold static decantation.<br />Alcoholic fermentation takes place in French oak barriques.<br />Aging: On the lees in French oak barriques for 4 months with weekly bâtonnage<br />Tasting notes: Straw yellow color with golden reflections; a bouquet with persuasive floral and peach scents and then delicate vanilla pervade the nose. PRIMITIVO DI MANDURIA DOP<br />Sessantanni<br />Typology: Red<br />Grape variety: Primitivo<br />Denomination: Primitivo di Manduria DOP<br />Cultivation: Trees at least sixty years old<br />Planting density: 5,000 vines per hectare<br />Production area: Valle del Sessantanni, about 40 hectares between San Marzano and Sava (TA). The thermal values characterise a rather warm environment with very low<br />annual rainfall and very high temperature variations, which has a positive effect on the quality of the grapes. This is the classic growing area for Primitivo di Manduria PDO.<br />Soil: Red residual soil with a fine texture, calcareous substrate and sparse rock outcrops. The famous red hue of these soils is due to the high content of iron oxides.<br />Harvest: Mid-September<br />Vinification: Hand-picking of slightly overripe grapes; destemming and maceration, maceration at 8°C for 24-48 hours before fermentation. Thermally controlled maceration<br />and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Final bottling with soft presses.<br />Maturation: Malolactic fermentation in stainless steel tanks followed by 12 months in French and American oak barriques.<br />Organoleptic characteristics: Very deep and elegant ruby red colour; rich and complex bouquet, fruity with notes of plums, cherry jam with a slight spiciness and hints of<br />tobacco. A wine of great body, soft and rich in noble tannins, with a finish that offers notes of cocoa, coffee and vanilla.<br />Pairings: Strong first courses, red meat and game.<br />Serve at: 18°C<br />

Opus One 2021 California...
The winter of 2017 ended a five-year drought with January recording the most rainfall in over 20 years. The abundant rainfall continued into March, causing a modest<br />delay in budbreak, and pushing bloom back by two weeks. Increased soil moisture allowed for healthy vine growth and development. The summer, in turn, was warm and<br />punctuated by occasional heat waves. Despite Mother Nature's variability, favorable weather in August provided optimal conditions for fruit development and maturation.<br />Superb flavors and excellent ripening led to an earlier than expected harvest, which commenced on the 5th of September.<br /><br />The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just<br />enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. The fine-grained, plush tannins<br />evolve into a long, supple finish.
