Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit. Pomino Bianco Riserva DOC<br /><br />'On the road to Pomino I am thrilled every time I discover this unique corner of Tuscany: hills and cypresses suddenly give way to steep slopes, cooler temperatures in<br />summer and snow in winter, magnificent forests of firs and centuries-old sequoias surrounding the vineyards of Chardonnay, planted here since 1855. At an altitude of 700<br />metres, the Cru Benefizio, the first white wine in Italy fermented and aged in barriques, was born in 1973.'<br /><br />Climatic trend<br />The 2021 season will be remembered as a dynamic vintage. After a rainy and mild winter, which had led to a slight advance in budding, temperatures dropped sharply at the<br />beginning of April, slightly slowing the growth of the buds. From May onwards, temperatures began to rise again, leading to a summer that will be remembered for both the<br />beautiful day-night temperature range and the long period of intense heat. The grapes presented themselves at harvest in a perfect state of health, thanks to the mild<br />temperatures and low humidity.<br /><br />Vinification and ripening<br />The Benefizio vineyard is located at an altitude of 700 m above sea level, with a southern exposure and predominantly sandy soil. The Chardonnay grapes were harvested in<br />boxes by hand with extreme care and attention. Once they arrived in the cellar, the pressing they underwent was extremely soft and gentle, allowing a good extraction of<br />clear must, which was further clarified after cold decantation. The musts thus obtained were placed in barriques, 50% new and 50% first-passage, where they underwent<br />alcoholic fermentation and only partially malolactic fermentation. Subsequently, the wine matured in wood, on the lees, with bâtonnage carried out as required. After further<br />bottle ageing, Benefizio Riserva reached its maximum taste-olfactory expression in terms of elegance and harmony.<br /><br />Tasting notes<br />Elegance, expressiveness and body. Benefizio 2021 presents a wonderful straw yellow colour with golden highlights. The bouquet is varied, presenting hints of white fruit<br />such as pear, exotic fruit notes such as mango, banana and pineapple and more citrus notes of candied citron. The citrus sensation is also picked up by hints of orange<br />blossom. On the palate it is savoury and mineral, with an elegant and harmonious finish; the aromatic intensity perceived on the palate is amplified by the alcohol content<br />and the aftertaste of dried fruit. Moscato d'Asti DOCG 2022...

On the label the Latin phrase 'Sator Arepo Tenet Opera Rotas' means 'the farmer with the plough directs the work'. We chose it when we acquired the vineyard and<br />became its owners. It is a vineyard on the hill of Mango, a village in the Langa. We bought it in 1990. The letter G highlighted on the label underlines the transmission from<br />father to son of the knowledge of the vineyard: Giuseppe, Giacomo and Giuseppe again.<br /><br />Denomination: Moscato d'Asti DOCG.<br />Grapes and Vineyard: Produced with 100% Moscato d'Asti grapes from our own vineyard in Mango.<br />Winery: Maceration with the skins for a few hours in a horizontal press followed by pressing. White vinification with prise de mousse in temperature-controlled autoclaves for<br />20 days at about 4°. At the end of fermentation, stabilisation with refrigeration at - 4°, microfiltration and refinement in the bottle for a few weeks.<br />Tasting: Brilliant straw yellow colour, fine foam and rich perlage. Extraordinarily fresh and very varied bouquet, with fresh fruit, orange blossom, rose and musk among the<br />many notes. Sweet but very graceful taste, aromatic characteristic of grapes, delicious and with long persistence. Accompanies: fruit desserts, fruit, dry pastries, panettone,<br />hazelnut cake, special cheeses such as Castelmagno. Very pleasant as an aperitif and as a thirst-quenching drink at any time of day.<br />Serving recommendations: Serve at 6 - 8°.<br />

We strive to preserve its full energy and wish to pair it with the most joyful moments in life. (Milena Vaira)<br />DESCRIPTION: Moscato is a beautifully aromatic variety that is deeply rooted in the winemaking heritage of Piemonte. We pick our grapes at full ripening, when the berries<br />start to be gold in color. Our dream is to bring all the perfumes, the freshness and the texture intact to the bottle.<br />VARIETY: 100% Moscato bianco.<br />VINEYARD AND TERROIR: Steep, old estate vineyards.<br />HARVEST AND WINEMAKING: Moscato harvest starts usually around the end of August. Picking decisions are individual to each site. Aldo always gives few more days of<br />ripening to this variety, which is a challenging decision in a crucial period yet rewarded by the beautiful fruits. Cold settling followed by a slow fermentation at low<br />temperature. Fermentation is stopped by drop of temperature, and the wine is kept refrigerated until bottling.<br />TASTING NOTES: Beautiful soft color with green reflections. Aromas of fruit with yellow flesh: apricot, peach, exotic fruits. Then elderflower, pear and a hint of sage.<br />Delicate and persistent bubbles, refreshing and cleansing the palate. The balance between sweetness and freshness continues in a long and creamy finish,<br />surprisingly savory.<br />

The perlage is fine and persistent. Nose: bouquet of rare intensity and fragrance, in which the varietal fruitiness is<br />in perfect harmony with hints of honey, combined with notes of white chocolate, spices and citrus fruits.<br />Taste: elegant and harmonious, velvety-bodied and composite: the fragrances of acacia honey and ripe hay combine well with floral notes. Vintage Collection Extra Brut 2018<br />Denomination: Franciacorta Millesimato.<br />Grape varieties: Chardonnay 65%, Pinot Nero 29%, Pinot Bianco 6%.<br />Original vineyards: 17 Chardonnay vines, with an average age of 28 years, located in the municipalities of Erbusco, Adro, Cazzago San Martino, Corte Franca and<br />Passirano. 7 Pinot Nero vines, with an average age of 29 years, located in the municipalities of Erbusco and Passirano. 2 Pinot Bianco vines, with an average age of 29<br />years, located in the municipality of Passirano.<br />Harvest: 2018. Very cold winter: February with snow and minimum temperatures as low as -7°C. With the onset of spring, the weather remained cold and damp and the<br />vines began budding about ten days later than usual. From mid-April, an abnormal rise in temperatures to 29°C favoured abundant flower fertilisation. With the arrival of May,<br />however, the rain returned. It was only from 15 July that the real summer was seen, which continued until 25 August with temperatures up to above average, with almost<br />torrid heat in August. The much-desired summer rain arrived in the third ten days of August and met the water requirements of the vines. The harvest that began on 13<br />August gave us a vintage characterised by a very generous nature, well managed by thinning, with beautiful, healthy and perfectly ripened grapes.<br />Average yield per hectare: 8,300 kilograms of grapes, equivalent to 3,570 litres of wine (wine yield: 43%).<br />Vinification: Franciacorta Vintage Collection wines are the fruit of careful grape selection and skilful vinification conducted in full respect of the Ca' del Bosco Method. The<br />grapes, freshly hand-picked into small crates, are graded and cooled. Each bunch of grapes is selected by expert eyes and hands, to then benefit from exclusive 'grape<br />spas'. A special system washes and whirlpools the bunches, using three soaking tubs and a drying tunnel. After crushing in the absence of oxygen, all the musts of the<br />base wines ferment in small oak barrels. In order to seek maximum aromatic complexity and expressive power, without losing elegance, the barrel elevage lasts only 5<br />months. A pair of flying tanks allows the wine to be transferred by gravity from the small barrels to the ageing tanks. After 7 months from the harvest, the cuvée is created.<br />The 2018 Vintage Collection Extra Brut is the result of a skilful blend of 26 base wines of Chardonnay, Pinot Blanc and Pinot Noir that give the finished product a particular<br />profile, rich and complex. The higher proportion of Pinot Noir gives it power and nobility, further reinforced by a long bottle ageing. The dégorgement takes place in the<br />absence of oxygen, using a unique system invented and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacorta<br />wines purer, more pleasant and longer-lived. Dégorgement takes place in the absence of<br />oxygen, using a unique system, invented and patented by Ca' del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacorta wines<br />purer, more pleasant and longer-lived. Satèn is the most delicate and elegant Franciacorta. Produced only in the best vintages, it is made from 100% Chardonnay grapes harvested in the high hillside vineyards.<br />The selection of the grapes is meticulous, to say the least, as is the slow maturation in small white oak barrels. Once assembled, the cu-vée is aged in the cellar for a<br />minimum of 4 years. The abundant mousse, the very fine perlage and the golden straw colour announce enchanting and suave aromas of pink flowers, ripe citrus fruits and<br />noisettes. The choice of no less than 40 vintage selections aims to define an essential, refined and elegant expression, without compromise. A<br />cuvée, of course, designed to last and evolve over time, as immediately expressive as it is long-lived.
