<br />Talò Negroamaro Salento I.G.P.<br />750 ml<br /><br />In San Marzano, the vine-growers take care of their small vineyard as they would of a garden.<br />Their stories are many, as are the names of their families.<br />We have chosen one, Talò, to thank them ideally: family for family, story for story.<br /><br />Grape variety: Negroamaro.<br />Area: San Marzano, Salento, Apulia. About 100 metres above sea level.<br />Soil: Medium-textured, clayey, shallow and with a good presence of skeleton.<br />Cultivation: Espallier (4,500 vines per hectare).<br />Harvest: Mid-September.<br />Vinification: Thermo-controlled maceration for about 10 days followed by alcoholic fermentation with selected yeasts.<br />Ageing: In French oak barriques for 6 months.<br />Organoleptic characteristics: Colour purple red with violet reflections: intense and persistent bouquet, with hints of blackcurrants and berries, spicy, with balsamic and vanilla<br />notes. Full-bodied, velvety and harmonious wine, with a long, savoury finish.<br />Food pairing: Robust first courses, meats and cheeses.<br />Serve at: 16-18 °C.<br />

At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international vines such as Cabernet or Merlot, in<br />order to maintain the authentic formula of the most famous of Italian wines while seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light touch<br />of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes. Argiolas<br />Senes<br /><br />Cannonau di Sardegna Controlled Designation of Origin, Reserve<br />Characteristics<br /><br />Colour: intense ruby red with garnet hues.<br />Nose: intense and elegant with a pleasant hint of red fruits, spices and Mediterranean herbs.<br />Taste: warm, round, with good structure and excellent balance.<br />Soil: Calcareous-clayey.<br />Refinement: bottle-aged.<br />Ageing: Evolution in small oak barrels for 12 months.<br />Vinification: Alcoholic fermentation with maceration at controlled temperature between 25-28°C for about 12-15 days. Malolactic fermentation in vitrified cement tanks.<br />Pairings: First and second courses, both traditional and traditional Sardinian, meat and vegetable dishes, well seasoned and medium and long aged cheeses.<br />

THE PINE OF BISERNO<br />2020<br />TUSCAN IGT RED<br />It is the purest and most direct expression of Bibbona's unique terroir. The special flavour of the grape makes Pino di Biserno a classic with an intriguing aroma,<br />distinguished by its excellent balance and timeless elegance. It shares an identity with its alter-ego, the Biserno.<br />INDICATIVE PERCENTAGE: Cabernet Franc 23%, Merlot 38%, Cabernet Sauvignon 22%, Petit Verdot 17%.<br />SOIL TYPE: Partly clayey, partly Bolgheri conglomerate.<br />GROWTH: The planting system is spurred cordon with a density of 6,500 vines/ha.<br />CLIMATE CONDITIONS: a moderate vintage with more consistent rainfall in the spring months that made temperatures a little cooler than average. Then the heat arrived in<br />early June bringing with it flowering, albeit with a slight delay. The summer recorded average temperatures with a good temperature difference between day and night. It can<br />be considered a good year.<br />HARVEST: Harvest began in the second week of September with the Merlot harvest, then continued with the Cabernet Franc and ended with the Cabernet Sauvignon and<br />Petit Verdot harvest in the first week of October.<br />VINIFICATION: The grapes were carefully selected on the vibrating belt in the cellar. Destemming and soft crushing; alcoholic fermentation in truncated conical steel tanks<br />for 3-4 weeks at 28°, malolactic fermentation in barriques for 25% of the mass, the remainder in steel.<br />AGING: The wine matures partly for 12 months in new and second-passage French oak barriques, the remaining 10% of the volume remains in steel.<br />TASTING NOTES: Ruby red in colour with purple reflections, on the nose it releases a complexity of aromas ranging from ripe red fruits to Mediterranean scrub and delicate<br />notes of tobacco and spices. On the palate it is soft, silky and tasty, calibrated in its dense and elegant tannic texture, long in the finish.<br />ALCOHOL: 14.5%<br />TOTAL ACIDITY: 5.0 G/L<br />PH: 3.67<br />

SOUTH TIROL DOC<br />LAGREIN RISERVA<br />VINEYARD KLOSTERANGER<br /><br />Our historic single vineyard: expressive, concentrated and straightforward.<br />IN THE VINEYARD<br />This Lagrein thrives at an altitude of 280 m in the middle of Gries. The historic vineyard is part of the monastery complex, where the vines stand on pure alluvial material from<br />the Talfer and a subsoil of Bolzano quartz porphyry. IN THE CELLAR<br />After fermentation and acid reduction in stainless steel, the wine is aged in new barrique barrels for 22 months, followed by harmonisation in enamelled steel tanks and<br />careful bottling after light filtration.<br />TASTING NOTES<br />The Klosteranger appears in deep garnet red and seduces with a bouquet of concentrated aromas. It is surprisingly lively and fruity on the nose with notes of coffee and<br />black berries as well as a hint of raspberries. On the palate, it convinces with grippy tannins, fresh acidity, delicate as well as elegant fullness and depth. Our single-vineyard<br />Lagrein is wonderfully complex, long-lasting and pampers the palate with a multi-layered structure. Best enjoyed well-tempered with braised game dishes, tenderly roasted<br />beef or spicy cheese dishes. Optimal drinking pleasure within 10 years.Alcohol: 13.50 % vol. The signature of Apanage is also a higher proportion of Chardonnay to give the wine a feeling of smoothness and elegance,<br />essential in the world of gastronomy.<br /><br />A superb pale yellow colour with very light golden highlights.<br />The fine buttery, almost pastry-like aromas are quickly joined by a bouquet of wild flowers and notes of candied citron and blood orange.<br />A frank attack, creamy notes in the mouth associated with notes of dried apricot and citrus fruit.<br /><br />Serving temperature: 8-10°C<br />Alcohol content: 12.5%.<br />Contains sulphites<br />
