Chardonnay 'Cardellino'...

Chardonnay 'Cardellino'...

Chardonnay 'Cardellino' 2022
South Tyrol DOC

The Chardonnay 'Cardellino' was the first wine of Elena Walch and is still probably the most popular wine of the winery. According to an old tale, the goldfinch - the
'Cardellino' - builds its nest only in Chardonnay vines, while it does not nest in other grape varieties. To this faithful little bird Elena Walch has thus dedicated her debut, an
elegant and characterful Chardonnay, which has won many lovers with minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino'
has long become a classic of South Tyrol and continues to be the most popular wine at the table of the Walch family. A wine to which one remains faithful, just as the
Cardellino remains faithful to its Chardonnay.
The Chardonnay 'Cardellino' convinces with a strong, straw-yellow color, with a complex play of fruity aromas, citrus and orange peel, some lime blossom, mineral richness
and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length: inviting,
refreshing and easy to drink.

COURSE OF THE VINTAGE 2022
An excellent vintage 2022 awaits you! Thanks to the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar. The 2022
vintage began with a warm spring, which led to an early start of flowering. The following summer was consistently dry and warm, and hot in mid-summer. The drought did not
lead to any problems, not least thanks to our irrigation systems and meteostations in the vineyard. The warm summer months resulted in very healthy grapes of very good
quality and ripeness. The acidity levels were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work in the summer, as well as a
somewhat earlier harvest. The first grapes were harvested at the end of August - as always completely by hand. Overall, the wines are complex, with great structure and very
good fruit.

VINIFICATION Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must
(about 15%) is fermented in French oak barrels where it matures for six months. The assemblage takes place in spring.

Alcohol: 13,50% Vol.
Total acidity: 6.5 g/L
Residual sugar: 0,3 g/L
Grape variety: 100% Chardonnay
Pomino Benefizio Riserva...

Pomino Benefizio Riserva...

Pomino Bianco Riserva DOC

'On the road to Pomino I am thrilled every time I discover this unique corner of Tuscany: hills and cypresses suddenly give way to steep slopes, cooler temperatures in
summer and snow in winter, magnificent forests of firs and centuries-old sequoias surrounding the vineyards of Chardonnay, planted here since 1855. At an altitude of 700
metres, the Cru Benefizio, the first white wine in Italy fermented and aged in barriques, was born in 1973.'

Climatic trend
The 2021 season will be remembered as a dynamic vintage. After a rainy and mild winter, which had led to a slight advance in budding, temperatures dropped sharply at the
beginning of April, slightly slowing the growth of the buds. From May onwards, temperatures began to rise again, leading to a summer that will be remembered for both the
beautiful day-night temperature range and the long period of intense heat. The grapes presented themselves at harvest in a perfect state of health, thanks to the mild
temperatures and low humidity.

Vinification and ripening
The Benefizio vineyard is located at an altitude of 700 m above sea level, with a southern exposure and predominantly sandy soil. The Chardonnay grapes were harvested in
boxes by hand with extreme care and attention. Once they arrived in the cellar, the pressing they underwent was extremely soft and gentle, allowing a good extraction of
clear must, which was further clarified after cold decantation. The musts thus obtained were placed in barriques, 50% new and 50% first-passage, where they underwent
alcoholic fermentation and only partially malolactic fermentation. Subsequently, the wine matured in wood, on the lees, with bâtonnage carried out as required. After further
bottle ageing, Benefizio Riserva reached its maximum taste-olfactory expression in terms of elegance and harmony.

Tasting notes
Elegance, expressiveness and body. Benefizio 2021 presents a wonderful straw yellow colour with golden highlights. The bouquet is varied, presenting hints of white fruit
such as pear, exotic fruit notes such as mango, banana and pineapple and more citrus notes of candied citron. The citrus sensation is also picked up by hints of orange
blossom. On the palate it is savoury and mineral, with an elegant and harmonious finish; the aromatic intensity perceived on the palate is amplified by the alcohol content
and the aftertaste of dried fruit. Persistent and long finish.
Nosiola CESCONI 750ml IGT

Nosiola CESCONI 750ml IGT

Nosiola is the only autochthonous white variety in Trentino, present since the time of the Council of Trent. The origin of the name has not yet been clarified. Many maintain
that it derives its name from hazelnut, due to the colour of the grapes when ripe, while others believe that it is the aroma of the wines that recalls that of wild hazelnuts.
What we do know is that it is a versatile variety, which like few others in the world can produce both great sweet wines and still white wines with a savoury character that
can age for many decades.

Once widespread throughout the province, Nosiola was mainly grown on the Pressano hill and in the Valle dei Laghi. In recent times, the variety has undergone a major
downsizing in favour of international varieties to the extent that it has become almost 'rare'. Today it covers a cultivated area of only 65 hectares. As winegrowers, attached
to our territory and our traditions, we are happy to contribute to its preservation.

Type of wine: White wine
Format: (Litres) 0.75
Production area: Nosiola is planted in the highest vineyards on the edge of the forest at an altitude of about 500 metres to the north-east of Pressano. Nosiola flowers early
and prefers high, well-ventilated and sunny areas. The vineyard is west-facing and has loose soil on a deep, fertile dolomite dejection cone. The vines have an average age of
35 years and are trained to the simple pergola system, with a density of about 3500 plants per hectare.
Vinification Part of the grapes are destemmed and macerated for 4-5 days until the 'cap rises'. At this point a cuvèe is made from the directly pressed grapes and
fermentation continues partly in stainless steel containers and partly in large acacia barrels. The acacia wood allows us to combine the advantages of vinification in wood
with the preservation of the fine and delicate bouquet of Nosiola. The wine remains in contact with its own yeast for about 9 months before being bottled at the end of the
summer.
San Giovanni della Sala...

San Giovanni della Sala...

San Giovanni Della Sala
Orvieto DOC Classico Superiore

Climate: 2020 will be remembered as a tendentially dry year. The winter, almost completely devoid of rain, was dominated by temperatures that were not too cold. The
spring weather, which arrived slightly later than in previous years, was characterised by mild days and temperatures above seasonal averages, with the exception of a few
cooler periods at the beginning of April. Then, from June until almost mid-August, the warm and dry weather led to an early ripening of the grapes. A summer thunderstorm
towards the end of August refreshed the later varieties such as Grechetto and Procanico, ensuring that they reached a good degree of ripeness while maintaining freshness
and fragrance. The harvest of Grechetto, Viognier and Pinot Bianco for San Giovanni della Sala began around the last week of August and ended with the harvest of
Procanico towards the middle of September.

Vinification: on arrival at the winery, the grapes were vinified separately by variety to enhance the varietal characteristics. Part of the must underwent cold maceration,
remaining in contact with its skins for about 6 hours at a temperature of 10 °C, before being combined with the must obtained from the soft direct pressing of the grapes. The
must thus obtained was transferred to stainless steel tanks where alcoholic fermentation took place at a controlled temperature of 16 °C. The wine remained on its lees for a
few months to improve its structure, elegance and minerality until it was blended and bottled.

Historical data: San Giovanni was born from the vineyards of the ancient Castello della Sala from the union of indigenous Grechetto and Procanico grapes with those of Pinot
Bianco and Viognier to tell the Orvieto Classico according to a new style. The first vintage of Castello della Sala Orvieto Classico was 1990.

Tasting notes: San Giovanni della Sala has a light straw yellow colour with greenish reflections. On the nose, pleasant notes of tropical fruit combine with light mineral
sensations. On the palate it stands out for its balance between structure and freshness with good flavour and a pleasant persistence of yellow flesh fruit.

Alcohol content: 12.0% Vol.
Vin Santo 375ml SALVETTA 2009

Vin Santo 375ml SALVETTA 2009

Vin Santo

Historical evidence tells of the existence of Vino Santo as early as the 16th century in the vicinity of Castel Toblino, and it is certain that a Vino Santo Puro was produced
from the Rauten vineyards in Sarche as early as 1825 (diploma Melbourne Australia 1880-1881).

The ancient tradition, masterfully perpetrated up to the Salvetta brothers, comes back to life with the Salvetta Winery: the long and complex process leads to the birth of this
great meditation wine.

Harvested late, in fact, the Nosiola bunches are left to rest in well-ventilated areas on the 'Arele', the racks on which the grapes dry naturally for several months, until they
are pressed during Holy Week, between March and April of the year following the harvest. The wine is then left to ferment and refine for five years in oak barrels and steel,
until bottling.

The result is a sweet wine to be enjoyed at a temperature of 10 - 12 degrees, on its own or with dry desserts. The combination with blue cheeses and foie gras is
exceptional.

The vintages currently being aged are those of the 2014, 2015 and 2016 harvests, while the 2009 and 2011 vintages are on sale.
