Awards<br /><br />2019 | Decanter | 95 points<br />2019 | Genuss Magazin | 91 points<br /><br />Grape varieties<br /><br />Merlot 35%, Cabernet Franc 30%, Pinot Noir 14%, Tempranillo 6%, Syrah 6%, Lagrein 5%, Petit Verdot 4%<br /><br />Location &amp; soil<br /><br />Our best red wine sites in Manincor, at Seehof, Panholzerhof and in Mazzon, between 250 and 500 m above sea-level, with strong clayey soils interspersed with limestone<br />gravel and other glacial rock deposits.<br /><br />Vintage<br /><br />2023 was a challenging year with climatic conditions that were anything but easy. Through hard work and meticulous attention to detail, we ultimately achieved great results.<br />Our vines coped well with both the wet spring and the hot and dry summer, and the golden autumn helped us achieve perfect ripeness. Physiolog-ical ripeness, sugar<br />ripeness and acidity are in perfect balance. Ripe fruit, cool character and moderate alcohol characterise the vintage.<br />From mid-September to the end of October, we were able to harvest all our red wine varieties at the best time. The average yield per hectare was 53 hl.<br /><br />Winemaking<br /><br />La Rose de Manincor is the result of the top red wine batches being made by the saignée method, i.e. bleeding off a proportion of wine after only short contact with the<br />skins - in this case 6 to 12 hours; it increases the ratio of skins to juice in the vat in order to obtain a red wine with more colour and tannin. Consequently the composition<br />and character of the rosé wine may vary slightly from year to year. The lightly coloured juice so obtained is fermented in oak barrels partially using yeasts occurring<br />naturally on the grapes. The young wine is subsequently matured on the fine lees to allow the aromas and flavour to develop.<br /><br />Data<br /><br />Residual sugar: 0.9 g/l<br />Alcohol: 13 % vol.<br />Acidity: malolactic fermentation: 6.0 g/l<br /><br />Description &amp; drinking recommendation<br /><br />Bright salmon red in colour with a bouquet reminiscent of raspberry and cherry, juicy and creamy on the palate, excellent length with a mineral-fruity aftertaste.<br />Enjoy at optimum maturity from early summer 2024 to the end of 2027.<br />Serve: very lightly chilled but not cold; 46 - 50 °F<br />An excellent match for well-seasoned first courses, fried or smoked fish as well as dishes of white and grilled meats.<br /><br />Our claim<br /><br />Biodynamic<br />Respekt-BIODYN<br />Vegan<br />

<br />VARIETY:<br />CHARDONNAY<br />VINEYARDS:<br />From our Family's own vineyards at Cascina Il Bricco in Treiso, in the Barbaresco area, and at Colombaro in Serralunga d'Alba in the Barolo area, which from the 2019<br />harvest will be replaced by Vigna Mosconi, in Monforte d'Alba, also in the Barolo area. Since 1985 it has represented our family's desire to produce a white wine with body,<br />complexity and longevity like the great red wines of our terroirs.<br />VINIFICATION AND AGING:<br />The Chardonnay is harvested in boxes, gently pressed and briefly decanted cold. It ferments and stays for 10 months on the lees in barriques made of only 1/3 new wood.<br />It then stays in the bottle.<br />NOTES:<br />Spicy, creamy, intense, persistent, ripe, still fresh, non-invasive wood. Long-lived. Produced in small quantities each year.<br />

Barolo Chinato<br />For about 21 days, small pieces of China Calissaia and China Succirubra bark are steeped in an infusion of alcohol and a very small amount of our classic Barolo. We<br />then add a mixture of aromatic spices including gentian root, rhubarb, cardamom seeds, sweet and bitter orange, cinnamon and others, which make up our historic<br />Family Recipe. To the aromatic extract thus obtained we finally add the right amount of our classic Barolo, a little sugar and alcohol and leave it to refine for at least 4<br />months in small stainless steel containers. After resting in the bottle for at least 2 months, our Barolo Chinato is ready to be enjoyed in the Piedmontese way, i.e. after<br />meals as a digestif.<br />

Epokale was the first Italian white wine to be awarded 100 points by Robert Parker's Wine Advocate. This wine contradicts the classic idea of a South Tyrolean<br />Gewürztraminer, redefines boundaries and impressively shows what this great variety is capable of.<br />Mild temperatures in spring brought about an early start of vegetation. The summer months were decidedly sunny and dry. Cool nights ensured that the physiological<br />ripeness could nevertheless develop in a balanced way. Thanks to a cool September, the ripening process was delayed so that an excellent harvest with optimally ripened<br />grapes took place. <br />South Tyrol Moscato Rosa DOC<br /><br />A rare pleasure in a small edition<br /><br />Castel Sallegg and Moscato Rosa. These two terms have long belonged together in South Tyrol. Not without reason, it was the Princes of Campofranco, ancestors of the<br />current owner Count Georg von Kuenburg, who in 1892 brought this noble grape variety with them when they moved from Sicily to Sallegg Castle in Caldaro and planted it<br />in the warmest soil on Lake Caldaro, where it thrived magnificently. Today, the rose muscatel is one of the rarest varieties in the world. The Moscato Rosa of Castel Sallegg<br />grows at the Seehof in St. Josef am See at 230 m above sea level on the traditional pergola.<br /><br />The production of this wine is very limited: Depending on the weather, Moscato Rosa may not be bottled at all in certain years. Otherwise, up to 1,000 bottles are bottled per<br />vintage.<br /><br />Tasting Notes:<br />A dessert wine whose colour is characterised by a dense raspberry red.<br />On the nose, rich aromas of roses, fine fruit components distantly reminiscent of lychee and ripe, very complex raspberry flavours, supported by an elegant spiciness in<br />the background.<br />Very opulent, repeating the aromas of the fragrance, this powerful wine type presents itself on the palate.<br />Serving temperature: 10-14°C<br />Shelf life: Up to 30 years. Moscato Rosa is Castel Sallegg's most famous wine and, as a variety, is one of the rarest in the world.<br />Food recommendation: Ideal with mature, spicy cheeses, foie gras, desserts with berry fruits (but with sugar restrained). Also perfect as a stand-alone wine in the sense of<br />a meditation wine.<br />Grape variety: 100% Moscato Rosa - Selection Kuenburg: Autochthonous variety.<br />Site: Kaltern - Seehof: 230 m above sea level. Gravel and reddish, ground Grödner sandstone. Warm, air-permeable soils with a special microclimate in the immediate<br />vicinity of Lake Kaltern.<br />Growing system: Traditional pergola<br />Yield per vine: 0.5 kg - 8 hl/ha due to natural trickling.<br />Vinification: The grapes are harvested very late with a minimum gradation of 32°KMW (160 Öchsle). This is followed by a week of maceration in stainless steel tanks.<br />Maturation: 1 year in stainless steel barrels, followed by 12 months in the bottle.<br />Alcohol: 12,5 %<br />Acidity: 7,3 g/l<br />Residual sugar: 161,4 g/l<br />

At about 100 m above sea level. The climate is characterized by a good thermal excursion between day and night.<br />Soil: Shallow and medium-fine texture<br />Harvest: August<br />Vinification: The grapes are destemmed and left in cryo-maceration for a few hours. The next step is the soft pressing of the pomace followed by a cold static decantation.<br />Alcoholic fermentation takes place in French oak barriques.<br />Aging: On the lees in French oak barriques for 4 months with weekly bâtonnage<br />Tasting notes: Straw yellow color with golden reflections; a bouquet with persuasive floral and peach scents and then delicate vanilla pervade the nose. Passito Comtess<br />Sanct Valentin<br />Passito is the Italian term for wines that are made from air- and sun-dried, almost rosined grapes. This usually takes place in our vineyard, i.e. the grapes remain on the<br />vine until the end of the year. South Tyrolean Pinot Blanc<br />Schulthauser<br /><br />Pinot Blanc, South Tyrol's most important grape variety, has awoken from its slumber and has become the region's flagship wine. Schulthauser is the classic among South<br />Tyrolean Pinot Blancs; it was first vinified and bottled in 1982. It is not a loud drop, but a consummate, finely fruity-fresh Pinot Blanc, which at the same time seduces with<br />creamy softness and racy acidity to enjoy.<br /><br />Grape variety: Pinot Blanc<br />Vine age: 10 to 40 years<br />Growing region: Site: Vineyards in 'Schulthaus' above Schloss Moos in Eppan/<br />Berg (540-620m)<br />Exposure: Southeast<br />Soils: Calcareous gravel soils with loam<br />Method of cultivation: Guyot<br />Harvest: Mid to late September, harvest and grape selection by hand.<br />Vinification: The majority (85%) is fermented in steel tanks, the rest in wooden barrels followed by<br />followed by biological acid reduction.
