<br /><br />The name 'Caliz' is derived from the Latin terms Calix (calyx) and Calx (limestone). The Chardonnay Caliz grows exclusively on light gravel soils with a high dolomite-lime<br />content.<br /><br />The yield has been reduced to 70 hl per hectare of vineyard. The delicate bouquet is reminiscent of ripe pineapple, baby bananas and lime peel. The characteristic<br />Mediterranean fruitiness is complemented by a taut acidity structure from selected Chardonnay lots from higher altitude vineyards. The wine gains in complexity and<br />consistency through longer ageing on the fine lees in large wooden barrels. The<br />grapes are pressed in the traditional tanks called lagares, followed by maturation of the Port in large old oak vats in the cellars in Vila Nova de Gaia.<br />COLOUR: intense ruby<br />BOUQUET: Intense aroma of wild fruits, spices, notes of dark chocolate, with a slight floral profile, making it a refined and very expressive Port wine<br />PAIRINGS: perfect with desserts in which chocolate predominates, especially dark chocolate. This wine put New Zealand on the global wine<br />map and made Sauvignon Blanc famous as a single varietal wine. More than 80 expressions of 98 parcels are used in its creation, with yields kept low to produce a wine<br />with a concentrated aroma. The winemaking process aims to preserve and enhance the fresh, fruity notes, using selected yeasts and stainless steel vats, along with a small<br />percentage of barrel fermentation to give structure but without hinting of oak.<br />TASTING NOTES<br />Intense and vibrant, with aromas of ripe passion fruit, white peach and a hint of lime. Its rarity lies in the unique combination of grapes<br />from the classic terroir of Las Compuertas, in Luján de Cuyo, with the more recently discovered terroirs in the Valle de Uco: Gualtallary, Los Chacayes, Paraje Altamira<br />and Eugenio Bustos, all between 1,070 and 1,200 metres above sea level.
