<br />Pfefferer<br /><br />The wine is named after the Pfefferer grape, a special variety of the golden muscat grape, which has always been called this in South Tyrolean folklore. Probably because of the spicy aroma, which is reminiscent of pepper. The Pfefferer is a light wine with youthful freshness and delicate fruit aromas of nutmeg.<br />The Pfefferer surprises with its elegant, tangy youthfulness and its distinct character.<br />Ageing potential: 2 years.<br />Recommended food: Ideal aperitif wine! Natural sedimentation and fermentation at<br />controlled temperature produce a wine unique in taste and aroma spectrum.<br />Food recommendation<br /><br />As an aperitif, strong starters, Asian-oriented cuisine, shellfish and Gorgonzola cheese.<br />

CLASSICO<br />RESERVE 'SERGIO ZENATO<br /><br />Amarone Riserva 'Sergio Zenato' is only made in vintages of excellence from the selection of the best Corvina, Rondinella and Oseleta grapes from the oldest vineyards<br />cultivated in Sant'Ambrogio, in the heart of Valpolicella Classica. This is followed by a slow fermentation for 15-20 days on the<br />skins and ageing for at least four years in large oak barrels and bottle ageing for at least one year.<br />Colour: deep ruby red, tending to garnet with age.<br />Nose: intense, fruity (cherry, morello cherry and small berries), spicy.<br />Taste: warm, full, with great structure.<br />Serving temperature: 18°C, taking care to open it at least one hour before serving.<br />Food pairings: ideal with roast game, grilled red meat and mature cheeses, but also excellent as a meditation wine.<br />

Chardonnay<br />This popular grape variety is at home all over the world. In the best individual vineyards of the municipality of Eppan, however, the grapes develop so excellently that they<br />produce a high-quality, powerful yet elegant top wine. Since 1986, the Chardonnay has been part of the Sanct Valentin line and is one of the most important wines of the<br />house. Excellent balance, well-integrated acidity and excellent storage potential.<br /><br />Grape variety: Chardonnay<br />Vine age: 10 to 32 years<br />Growing region:<br />Site: selection of the best single vineyard sites in the municipality of Eppan (450-550m).<br />Exposure: south-east, south-west<br />Soils: sandy calcareous gravel soils (or calcareous gravel soils)<br />Method of cultivation: Guyot<br />Harvest: Late September to early October, hand harvest and grape selection.<br />Vinification: Fermentation, malolactic fermentation and ageing on the lees in barrique tonneaux. Assemblage after almost a year and further maturation for at least eight<br />months in concrete barrels.<br />Yield: 45 hl/ha<br />Analytical data:<br />Alcohol content: 14 %<br />Acidity: 5,55 gr/lt<br />Drinking temperature: 10-12°.<br /><br />Recommended consumption:<br />Likes to accompany strong dishes such as 'fritto misto' (fried seafood), porcini ravioli with cream sauce or risotto with grey cheese and chilli.
