The Apanage cuvée was conceived as a confidential cuvée dedicated to gastronomy.<br /><br />Apanage was created by meticulously selecting seventeen villages with a strong identity and link to Pommery. These terroirs, articulated around the solid base represented<br />by the Montagne de Reims, produce exceptional grapes each year, the indispensable basis for the creation of the POMMERY style.<br /><br />'Apanage' evokes distinction and privilege. The signature of Apanage is also a higher proportion of Chardonnay to give the wine a feeling of smoothness and elegance,<br />essential in the world of gastronomy.<br /><br />A superb pale yellow colour with very light golden highlights.<br />The fine buttery, almost pastry-like aromas are quickly joined by a bouquet of wild flowers and notes of candied citron and blood orange.<br />A frank attack, creamy notes in the mouth associated with notes of dried apricot and citrus fruit.<br /><br />Serving temperature: 8-10°C<br />Alcohol content: 12.5%.<br />Contains sulphites<br />

The deep soils on which<br />these vineyards are cultivated contribute to perfumed and elegant wines with a light and delicate tannic texture.<br /><br />Climatic trend<br />The 2021 season will be remembered as a dynamic vintage. After a rainy and mild winter, which had led to a slight advance in budding, temperatures dropped sharply at the<br />beginning of April, slightly slowing the growth of the buds. From May onwards, temperatures began to rise again, leading to a summer that will be remembered for both the<br />beautiful day-night temperature range and the long period of intense heat. The grapes presented themselves at harvest in a perfect state of health, thanks to the mild<br />temperatures and low humidity.<br /><br />Technical notes<br />Varietal: Sangiovese<br />Alcoholic grade: 13.5%.<br />Maturation: in oak barrels<br />Vinification and maturation<br />Once harvested, the Sangiovese grapes were fermented in temperature-controlled stainless steel tanks. During this phase, cap breaking was of fundamental importance,<br />allowing perfect extraction of the polyphenolic substances. Subsequently, the wine spent a period of maturation in the cellar, part of it in wood. Further time in bottle<br />completed its qualitative course before release for consumption.<br /><br />Tasting notes<br />Campo ai sassi 2021 has a wonderful ruby red colour. The bouquet is mainly characterised by fruity<br />fruity and floral notes. Among the fruity notes stand out the currant and morello cherry, among the floral ones certainly the violet. In the mouth it is<br />fresh, soft and persuasive. The tannin is soft. The persistence is pleasantly long.<br />

Hebo<br />Cabernet sauvignon 50%, merlot 40%, sangiovese 10%.<br />The name of an Etruscan settlement of ancient origin, Hebo recalls the historical roots of Suvereto.<br /><br />It is produced from a classic blend of Cabernet Sauvignon, Merlot and Sangiovese, vines introduced to the area by Elisa Bonaparte Baciocchi, princess of Piombino from<br />1805 and enlightened woman of wine.<br /><br />The ruby colour is bright, the aromas reveal fresh scents of sour cherries, violets and blueberries, before turning to seductive mineral hints and nuances of Mediterranean<br />scrub.<br /><br />On the palate, the wine is structured but fresh, savoury and with good momentum. The finish is pleasantly fruity, delicate in its savoury character and with gentle tannins.<br /><br />Production methodSun, wind and three complementary soils<br />The production method is rigorously aimed at defending the territorial connotation.<br /><br />The grapes are harvested in boxes, fermentation is carried out with indigenous yeasts and vinification takes place in steel tanks. The wine is aged for about a year in<br />Slavonian oak barrels and a small percentage of used barriques. The Sangiovese<br />Vin del Fattore is a modern take on the Governo technique used in Tuscany by drying part of the grapes in crates at a controlled temperature.<br /><br />Grapes: Sangiovese 95%, Ciliegiolo 5%.<br />Training system: spurred cordon<br />Planting density: 4000 vines/hectare<br />Soil type: sandy loam<br />Altitude: between 60 and 90 metres a.s.l.<br />Age of vineyards: 5-10 years<br />Harvest time: mid-September for Ciliegiolo, early October for Sangiovese<br />Method of fermentation: The Sangiovese grapes are harvested by hand into small perforated crates and dried in cold rooms until they lose 15% of their weight. Vinification of<br />the Sangiovese grapes at low temperature (max. 27°C) with maceration on the skins for 4-6 days, racking and end of fermentation without further contact with the skins.<br />After about 4 weeks of drying, the Ciliegiolo grapes are pressed and, once full fermentation is reached, the previously vinified Sangiovese is added. Fermentation proceeds<br />until the sugars are almost completely depleted; malolactic fermentation starts naturally at the end of primary fermentation.<br />Maturation: in steel for three months on the fine lees.<br />Bottling: in the month of May following the harvest.<br />Ageing potential: to be drunk young, within 2-4 years after harvesting.<br />Description: Sangiovese Toscano IGT Vin del Fattore is an elegant ruby red wine, with pleasant notes of red fruits (plums, blackberries and cherries) and hints of spices.<br />Medium structured and dry, round on the palate with an elegant fruity finish and round tannins.<br />Food pairing: Perfect with cured meat starters, first courses with meat sauces and main courses.<br />Serving temperature: 16°C<br />Ideal glass: a large Bordeaux-type goblet.<br />
