Chardonnay, Pinot Blanc, Sauvignon and Gewürztraminer, aged on the fine yeast and matured in wood,<br />merge into a cuvée with remarkable structure and elegance. All this combined in a unique packaging. The outer shell: Unique in elegance and sophistication.This year's<br />image in the bottle depicts the 'youthful Bacchus' and is attributed to the Caravaggio school around 1600. Bacchus reaches for the grape, the 'materia prima', without<br />which this unique wine would not exist. The grape and the wine are united in the bottle. In between are other dimensions, from the harvest to the fermentation process to<br />the ripening, and what else can resonate and stimulate beyond the wine.<br /><br />Description: Strong straw-yellow colour, a fruity hint of exotic scents. A wine with a great structure, elegant, rich in aromas and of remarkable longevity. These characteristics derive from a very low yield per hectare, the delayed harvesting of<br />selected grapes and maturation in steel for at least one year before bottling.<br /><br />Type of wine: dry white.<br />Area of origin: Castelli di Jesi hills in the area known as Classica.<br />Soil: medium-textured, with areas rich in clay alternating with sandy areas.<br />Grapes: pure Verdicchio.<br />Yield per hectare: 70 q<br />Processing: harvesting of the grapes when fully ripe with accurate selection; soft pressing of the whole bunches, cleaning of the cold must and fermentation at low<br />temperature.<br />Ageing: 15 months in stainless steel tanks at 10° C on the noble lees and maturation in the bottle for 4 months in a thermo-conditioned room.<br />Colour: straw yellow.<br />Intense, elegant, fruity bouquet with hints of citrus fruits.<br />Taste: persuasive, soft, with great character, long lasting flavour, warm and elegant.<br />Consumption: up to 10 years.<br />Recommended with first courses, fish and white meat with aromatic herbs.<br />Serving temperature: 12° C<br />

Réserve della Contessa - the feminine wine.<br /><br />Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.<br /><br />Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).<br />Colour: strong yellow with greenish reflections.<br />Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.<br />Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at<br />300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is<br />a strong loamy limestone soil with rock deposits from ice-age glaciers.<br />Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden<br />barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.<br />Serving temperature: 10 - 12 °C.<br />Goes well with: starters, fish and white meat.<br />

<br />2009: THE PINNACLE OF MATURITY<br /><br />2009 brings to a close in the best possible way a prodigious, sunny, bold and generous decade. This continuation of favourable weather conditions is unprecedented, and<br />the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is<br />driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the<br />promise of a wine full of freshness and energy.<br /><br />NOSE<br />The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla<br />and warm, delicately toasted brioche.<br /><br />PALATE<br />The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is<br />extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.<br /><br />CULINARY PAIRINGS<br />The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.<br />The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works<br />perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.<br />

The wine impresses with its fascinatingly changeable personality and makes opening each bottle an exciting surprise.<br /><br />VINIFICATION<br />Separate vinification of the two varieties, partly spontaneous fermentation, eight-month ageing on the fine lees in wooden or steel barrels.<br /><br />SITUATION / SOIL<br />Höfl unterm Stein in Söll near Tramin is situated on a south-eastern slope at 480 to 550 m above sea level. Gris is a pure Pinot Grigio from a single vineyard where all the vines have reached productive maturity.<br />After the start of fermentation in steel, this continues and is completed in 500-litre French oak casks, followed by 11 months of maturation on fine deposit in the same<br />fermentation containers. During this period, the aromatic range increases without changing the original characteristics of the vine.<br />Grape variety: Pinot Grigio<br />Denomination: DOC Friuli Isonzo<br />Vineyard: Cultivated with organic fertilisation and ingested phytosanitary defence (EU regulations) with abolition of chemical weeding.<br />Harvest: By hand with careful selection of the bunches.<br />Vinification: Fermentation in 500 lg French oak barrels (22-24° C), maturation in the same containers as the fermentation on fine deposit for 11 months with frequent<br />bâtonage. Bottling and refining in bottle for a minimum of 12 months.<br />Alcohol content: 13,5 % Vol.<br />Serving temperature: 11° C.<br /><br />An ample and complex wine with fruity hints of pears and warm balsamic notes. Long and persistent finish. This wine goes well with fish and white meat dishes.<br />
