On the nose hints of red fruits, such as strawberry and cherry, and a light spiciness reminiscent of pepper. On the palate a fine wine, but<br />at the same time elegant and characterised by power. On the palate fullness, elegance and taut, persistent tannin, long and fine taste. Perfect pairing: Barolo par excellence<br />goes well with important dishes, such as traditional Piedmontese main courses of meat such as boiled meats and stews. Spanning the world's traditions, we find goulash in<br />Eastern Europe, entrecôte in France and reindeer stew, Poronkaristys, in Finland. In Norway, on the other hand, it can be combined with fårikål, a meat stew accompanied<br />by cabbage. Staying in Europe, Barolo goes well with a typical Greek dish, souvlaki, a skewer of meat and vegetables. Going to Japan instead, we think of gyoza (fried<br />dumplings filled with spring onion, marinated pork and spices). Moving to the United States of America, beef (angus, wagyu, ox nostral, longhorn) in the brisket cut. But if<br />you have the pleasure, even a simple 'special' toast is perfect!<br />

Spontaneous fermentation without added yeasts in cement<br />tanks, with subsequent submerged cap maceration for at least 30 days at a temperature of 29°. After racking, malolactic fermentation is triggered, about 15 days at a<br />constant temperature of 22 C. PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable for chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.<br /><br />

Masseto 2019 IGT Toscana 750ml

2016<br />As is often the case in recent years, the winter of 2016 was characterised by unusually warm weather with heavy rainfall in February. Budding arrived on time in the last<br />week of March. The abundance of water in the soil and the warm weather in April favoured rapid and normal vegetative growth of the vines. In May, temperatures returned to<br />normal, slowing growth slightly and leading to flowering in the last week of May in dry, sunny weather, perfect for good fruit set. Summer temperatures were normal with very<br />little rain causing considerable water stress towards the end of the ripening phase. The usual mid-August storms were also absent, prolonging the water stress throughout<br />the early part of the harvest. Fortunately, the remarkably cool temperatures during the night allowed the vines to recover from the heat of the day. Maturation proceeded<br />smoothly with excellent phenolic potential and a balanced sugar/acid ratio. The harvest began on 24 August with the youngest vines. In September, the few rainfalls provided<br />the soil with sufficient water to complete the harvest in practically perfect conditions. The older vines of the 'Masseto centrale' benefited from this situation, continuing their<br />ripening until the third week of September. The last plots were harvested on 20 September.<br />TASTING NOTES: 2016 was a textbook year for Masseto, with a typically Tuscan coastal climate that saw a dry and sunny growing season, with plenty of sunshine and<br />just the right amount of rain for perfect ripeness. The 2016 has a particularly intense young colour, and on the nose the intense aroma of ripe dark fruit blends with subtle<br />notes of cocoa and spices. On the palate, the rich, dense structure of ripe, silky tannins is balanced by a sensual, vibrant fruit note and lively acidity that keeps the long<br />finish clean and full-bodied.<br />
