PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a<br />long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in<br />Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the<br />Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the<br />marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in<br />bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth.<br />The strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable<br />for chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.<br />

The vines are between 60 and 90 years old. Old vines naturally produce low and therefore very<br />high quality yields. Traditionally, the SONNTALER is a blend of different Vernatsch varieties with a high percentage of Grauvernatsch. The ideal terroir and the traditional<br />ageing in large Slavonian wooden barrels give a wine with a complex aroma of raspberries, wild strawberries, cherries and red currants. The elegant, slender body is<br />gripping on the palate. Fine-grained tannins give the smooth, varietal fruitiness a long and hearty finish. SONNTALER: the classic.<br /><br />Vernatsch is considered the lightest red wine variety in the world, which is why the drinking temperature is particularly important: we recommend 13°C!<br />

Classification<br />Franciacorta DOCG<br />Vintage<br />2021<br />Vinification<br />The 2020 growing season in Franciacorta began with mild<br />winter weather that prompted normal budbreak during the first<br />two weeks of April. Flowering took place during the second half<br />of May under mild climatic conditions. June brought lower-<br />than-average temperatures and generous rainfall while July was<br />dry and breezy, ideal conditions for optimal veraison and<br />ripening phases. Excellent temperature swings between day<br />and night allowed the grapes to develop rich aromas and bright<br />acidity, ideal for producing fine sparkling wine. The grape<br />harvest for Donna Cora began mid-August.<br /><br />Tasting Notes<br />Donna Cora is straw yellow in color. Its creamy mousse and delicate, persistent perlage define the finest qualities of<br />Franciacorta Satèn. The nose presents elegant notes of white flower blossoms and pleasant hints of white pulp fruit.<br />The palate reveals balance and complexity, the perfect expression of an extraordinary and elegant vintage.<br />Historical Data<br />The Montenisa estate is located around the hamlet of Calino, near Lake Iseo in the heart of the Franciacorta<br />appellation. The vineyards surrounding the proprietary villa of the Maggi family have been the heart of the<br />production of Marchese Antinori Franciacorta since 1999.<br />
