Exilissi Sell 2007<br /><br />Vintage: After an exceptionally mild winter, the vines sprouted earlier than ever before. April and May were also warmer than average, so that by mid-May the flowering was<br />already over in all locations. This 3-week advance in vegetation lasted until harvest. The cool August and a golden September proved it once again: The last weeks before<br />the harvest are decisive for the quality.<br />Whites and reds were able to ripen perfectly and were harvested at the optimal time. That is why the harvest took longer than ever before. The first grapes entered the<br />cellar on 21 August, the last on 24 October. All in all, it should be a very good vintage. The red wines promise to be the best of the last ten years.<br /><br />Vinification: gentle pressing of the delicate grapes. Fermentation of the unclarified must in 500 l tonnequx, further 15 months of maturation in the same barrel. Bottled in<br />March 2009<br /><br />Harvest conditions: a sunny and warm late autumn allowed the grapes to hang until mid-November, thus enabling the harvest of a very ripe grape.<br /><br />Site/soil: Höfl unterm Stein in Söll near Tramin, situated on a south-eastern slope at 480 to 550 metres above sea level. On gravelly, loamy calcareous gravel soil, there are<br />both 30-year-old pergola plants and wire frames that are over 10 years old, which produce something unique with an extremely low yield of 25hl/ha.<br /><br />Oenologist's notes: an enormously concentrated late harvest with intense aromas of sultanas, apricots and spices. Very smooth and long on the palate. <br />Ronchedone Red Wine<br /><br />In the area where the first morainic hills rise, red wines of considerable thickness and power are also obtained and Ronchedone is the absolute demonstration of this.<br />Strongly desired from the moment it was felt that certain areas and certain microclimates were suitable for obtaining a wine like this. Marzemino, Sangiovese and 10%<br />Cabernet make it a wine that cannot go unnoticed. The nose is very rich with notes of red fruits, macerated blueberries, morello cherries in alcohol, balsamic and jammy<br />hints. On the palate it is powerful and incisive, clean, savoury, with a fine acidity, a sign of the Benaco soil. PRIMITIVO DI MANDURIA DOP<br />Sessantanni<br />Typology: Red<br />Grape variety: Primitivo<br />Denomination: Primitivo di Manduria DOP<br />Cultivation: Trees at least sixty years old<br />Planting density: 5,000 vines per hectare<br />Production area: Valle del Sessantanni, about 40 hectares between San Marzano and Sava (TA). The thermal values characterise a rather warm environment with very low<br />annual rainfall and very high temperature variations, which has a positive effect on the quality of the grapes. This is the classic growing area for Primitivo di Manduria PDO.<br />Soil: Red residual soil with a fine texture, calcareous substrate and sparse rock outcrops. The famous red hue of these soils is due to the high content of iron oxides.<br />Harvest: Mid-September<br />Vinification: Hand-picking of slightly overripe grapes; destemming and maceration, maceration at 8°C for 24-48 hours before fermentation. Thermally controlled maceration<br />and alcoholic fermentation with selected yeasts for about 10 days at 24-26°C. Final bottling with soft presses.<br />Maturation: Malolactic fermentation in stainless steel tanks followed by 12 months in French and American oak barriques.<br />Organoleptic characteristics: Very deep and elegant ruby red colour; rich and complex bouquet, fruity with notes of plums, cherry jam with a slight spiciness and hints of<br />tobacco. A wine of great body, soft and rich in noble tannins, with a finish that offers notes of cocoa, coffee and vanilla.<br />Pairings: Strong first courses, red meat and game.<br />Serve at: 18°C<br />

During this phase, cap breaking was of fundamental importance,<br />allowing perfect extraction of the polyphenolic substances. Subsequently, the wine spent a period of maturation in the cellar, part of it in wood. Further time in bottle<br />completed its qualitative course before release for consumption.<br />

Tonic and juicy on the palate, it is a ripe, full-bodied<br />wine with extremely lively tannins; an invigorating citrus note perfectly balances its high alcohol and helps make this big wine a most enjoyable drink.<br /><br /><br />Recommended food pairings<br /><br />Amarone is made from dried grapes and is therefore a concentrated, round and powerful wine, an elixir of long life. After a few years of bottle ageing, it becomes an excellent<br />complement for luxurious dishes such as jugged hare, roast turkey with truffles, braised beef in red wine, Amarone risotto.
