Cervaro della<br />Sala is one of the first Italian white wines to have malolactic fermentation and aging take place in barriques. This wine put New Zealand on the global wine<br />map and made Sauvignon Blanc famous as a single varietal wine. More than 80 expressions of 98 parcels are used in its creation, with yields kept low to produce a wine<br />with a concentrated aroma. The winemaking process aims to preserve and enhance the fresh, fruity notes, using selected yeasts and stainless steel vats, along with a small<br />percentage of barrel fermentation to give structure but without hinting of oak.<br />TASTING NOTES<br />Intense and vibrant, with aromas of ripe passion fruit, white peach and a hint of lime. The palate is deliciously concentrated and tropical, with saline notes providing<br />structure, while the passion fruit and vibrant citrus acidity bring balance.<br />

<br />VARIETY:<br />CHARDONNAY<br />VINEYARDS:<br />From our Family's own vineyards at Cascina Il Bricco in Treiso, in the Barbaresco area, and at Colombaro in Serralunga d'Alba in the Barolo area, which from the 2019<br />harvest will be replaced by Vigna Mosconi, in Monforte d'Alba, also in the Barolo area. Since 1985 it has represented our family's desire to produce a white wine with body,<br />complexity and longevity like the great red wines of our terroirs.<br />VINIFICATION AND AGING:<br />The Chardonnay is harvested in boxes, gently pressed and briefly decanted cold. It ferments and stays for 10 months on the lees in barriques made of only 1/3 new wood.<br />It then stays in the bottle.<br />NOTES:<br />Spicy, creamy, intense, persistent, ripe, still fresh, non-invasive wood. Long-lived. Produced in small quantities each year.<br />

The grapes for this aromatic wine, of a delicate straw yellow colour and with a complex, elegant and musky bouquet, ripen in vineyards well exposed to the sun, from south to south-west, and bring sweetness, flavour and a very long aromatic persistence to the glass, reminiscent of the flavours and aromas of ripe grapes.<br />It ideally accompanies desserts and in particular creams, fruit tarts and small pastries.<br /><br />TECHNICAL DESCRIPTION:<br />Vineyard exposure: east-south to south-west.<br />Soil composition: clayey-tufaceous soil rich in limestone, which enhances the finesse and aromaticity of the wines, very important for this grape variety.<br />Vine density: 4800 vines per hectare.<br />Type of training: low plant with simple guyot, tending to bring the leafy part upwards, in order to expose the bunches to the sun and encourage photosynthesis on the leaves. A maximum of 8/9 fruit buds are left.<br />Harvest: 1st or 2nd decade of September, picked by hand.<br /><br />ORGANOLEPTIC DATA SHEET:<br />Denomination: Moscato d'Asti DOCG<br />Grape variety: Moscato<br />Colour: more or less deep straw yellow.<br />Perlage: fine and persistent.<br />Bouquet: rich, intense and fragrant aroma of the Muscat grape reminiscent of wisteria, peach, apricot with hints of sage, lemon and orange blossom.<br />Taste: sweet, delicate, fresh flavour with moderate alcohol content.<br />Serving suggestions: Serve chilled, with dessert, with various pastries, as a thirst quencher at any time of day. At about 100 m above sea level. The climate is characterized by a good thermal excursion between day and night.<br />Soil: Shallow and medium-fine texture<br />Harvest: August<br />Vinification: The grapes are destemmed and left in cryo-maceration for a few hours. The next step is the soft pressing of the pomace followed by a cold static decantation.<br />Alcoholic fermentation takes place in French oak barriques.<br />Aging: On the lees in French oak barriques for 4 months with weekly bâtonnage<br />Tasting notes: Straw yellow color with golden reflections; a bouquet with persuasive floral and peach scents and then delicate vanilla pervade the nose. The palate is opulent<br />in its elegance, fresh, delicate and mineral.<br />Food pairings: Appetizers, fish dishes and cheeses<br />Serve at: 12-14°C<br />
