During<br />this period the Vin Santo acquires naturally its alcohol<br />content while maintaining a certain sugar level which helps<br />the development of the details organoleptic characteristics.<br />Organoleptic characteristics<br />Color: intense golden yellow.<br />Bouquet: intense with hints of honey and dried fruit.<br />Taste: full, soft, sweet and with good structure.<br />Winemaker's recommendations<br />Excellent dessert wine, indicated alone or in accompaniment<br />to dry desserts or blue cheeses.<br />Serve at a temperature of 10/12 °C<br />Alcohol content: 15% vol.<br />

In contrast to the German models,<br />the wines here in South Tyrol are usually vinified without residual sweetness.<br /><br />Grape variety: Riesling<br />Growing region/climate: Slopes around Bolzano and the Valle Isarco, 500 m above sea level.<br />Harvest: Beginning to middle of October<br />Vinification: Carefully selected grapes are gently pressed and fermented in steel tanks at a controlled temperature. The bouquet is reminiscent of<br />nettle, apples, green peppers and tropical fruits.<br />With a harmonious balance of acidity and minerality, notes of elderberry, banana and vanilla enrich the lively character of this wine.<br />Thanks to its excellent quality, this wine has been included in the Bernardi collection. <br /><br />The name 'Caliz' is derived from the Latin terms Calix (calyx) and Calx (limestone). The Chardonnay Caliz grows exclusively on light gravel soils with a high dolomite-lime<br />content.<br /><br />The yield has been reduced to 70 hl per hectare of vineyard. The delicate bouquet is reminiscent of ripe pineapple, baby bananas and lime peel. The characteristic<br />Mediterranean fruitiness is complemented by a taut acidity structure from selected Chardonnay lots from higher altitude vineyards. The wine gains in complexity and<br />consistency through longer ageing on the fine lees in large wooden barrels. The<br />grapes are pressed in the traditional tanks called lagares, followed by maturation of the Port in large old oak vats in the cellars in Vila Nova de Gaia.<br />COLOUR: intense ruby<br />BOUQUET: Intense aroma of wild fruits, spices, notes of dark chocolate, with a slight floral profile, making it a refined and very expressive Port wine<br />PAIRINGS: perfect with desserts in which chocolate predominates, especially dark chocolate. Its rarity lies in the unique combination of grapes<br />from the classic terroir of Las Compuertas, in Luján de Cuyo, with the more recently discovered terroirs in the Valle de Uco: Gualtallary, Los Chacayes, Paraje Altamira<br />and Eugenio Bustos, all between 1,070 and 1,200 metres above sea level. The vines are between 20 and 90 years old.<br /><br />TASTING NOTES<br />A complex and layered expression, revealing aromas of red and black fruits, subtle hints of violets and delicate toasted notes.
