The winter of 2017 ended a five-year drought with January recording the most rainfall in over 20 years. The abundant rainfall continued into March, causing a modest<br />delay in budbreak, and pushing bloom back by two weeks. Increased soil moisture allowed for healthy vine growth and development. The summer, in turn, was warm and<br />punctuated by occasional heat waves. Despite Mother Nature's variability, favorable weather in August provided optimal conditions for fruit development and maturation.<br />Superb flavors and excellent ripening led to an earlier than expected harvest, which commenced on the 5th of September.<br /><br />The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just<br />enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. The fine-grained, plush tannins<br />evolve into a long, supple finish. Praeclarus Brut<br />Blanc de Blancs South Tyrol DOC<br /><br /><br />Perfumed South Tyrolean joie de vivre. Elegance, freshness, harmony and complexity. Animating and seductive. Refreshing and lively.<br />Brilliant yellow with golden reflections. Intense and particularly fine, velvety bouquet of almond blossom, peach and apricot, with hints of fresh hazelnut and bread crust.<br />Very fine and long-lasting perlage.<br />Terroir:<br />The Chardonnay grapes are rooted in vineyards above St. Pauls between 300 and 500 m above sea level on the calcareous dolomite rock of the Mendel mountain range<br />with sand and clay deposits. The south-east exposure, the constant aeration by fall winds and the autumnal temperature differences between day and night ensure a unique<br />microclimate in which the grapes ripen well on the vine for an above-average length of time and thus develop an optimal acid-sugar ratio.<br />Vinification:<br />Ripe grapes, harvested by hand. Gentle whole bunch pressing. Maturation of the base wine in large wooden barrels for several months, followed by traditional bottle<br />fermentation and 40 months of maturation on the fine lees at a naturally constant temperature in the historic bunker.<br />Recommended with: Classic as an aperitif.<br />Alcohol: 12,5 % vol.<br />Ingredients: contains sulphites<br />

Straw yellow colour with greenish highlights. Complex, very fine bouquet, with pleasant fruity notes of citrus and peach.<br />Dry, pleasantly fresh flavour with a good, balanced structure.<br />Pairings<br /><br />Excellent as an aperitif and with fried prawns or escalopes alla livornese.<br /> <br /><br /> <br />More Info<br /><br />The most known and traditional Altemasi label is the Millesimato, sparkling Traditional Method Blanc de Blancs, whose mark is the elegance obtained from the long<br />maturation on the yeasts (over 24 months). Elegance and finesse are linked to the fruity and mineral bouquet.<br />Tasting Notes<br /><br />Persistent foam with minute fine-grain perlage. Straw yellow colour, with very faint greenish tinges. Complex, highly refined nose, fruity, mineral,with light notes of bread<br />crust. At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international grape varieties such as Cabernet<br />or Merlot, in order to maintain the authentic formula of the most famous of Italian wines while at the same time seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light<br />touch of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes.
