Vin Santo<br /><br />Historical evidence tells of the existence of Vino Santo as early as the 16th century in the vicinity of Castel Toblino, and it is certain that a Vino Santo Puro was produced<br />from the Rauten vineyards in Sarche as early as 1825 (diploma Melbourne Australia 1880-1881).<br /><br />The ancient tradition, masterfully perpetrated up to the Salvetta brothers, comes back to life with the Salvetta Winery: the long and complex process leads to the birth of this<br />great meditation wine.<br /><br />Harvested late, in fact, the Nosiola bunches are left to rest in well-ventilated areas on the 'Arele', the racks on which the grapes dry naturally for several months, until they<br />are pressed during Holy Week, between March and April of the year following the harvest. The wine is then left to ferment and refine for five years in oak barrels and steel,<br />until bottling.<br /><br />The result is a sweet wine to be enjoyed at a temperature of 10 - 12 degrees, on its own or with dry desserts. The combination with blue cheeses and foie gras is<br />exceptional.<br /><br />The vintages currently being aged are those of the 2014, 2015 and 2016 harvests, while the 2009 and 2011 vintages are on sale.<br />

<br />The elegant Marlborough red<br /><br />A balanced and lively expression of Pinot Noir from the Marlborough region.<br /><br />The 2017 growing season began with ideal spring conditions; warm temperatures and few frost events encouraged good canopy growth. Settled weather over flowering led to<br />high potential crops, fruit thinning was widely employed to reduce yield and achieve optimum vine balance. Fastidious canopy management throughout the mild and sunny<br />growing season ensured fruit developed, then ripened, at an ideal rate. The excellent weather during the ripening season was interrupted by rain events during the harvest.<br />The single-minded quality focus of the viticulture and winemaking teams, with hour by hour assessment, led to optimum picking decisions. Our low-yielding, early-ripening<br />vineyards with their open canopies, stood us in good stead in what was a tricky vintage across Marlborough and New Zealand.<br /><br />Nose: Appealingly aromatic, the 2017 Pinot Noir reveals notes of Morello cherry and bramble.<br />Palate: Fine, silky tannins and juicy acidity provide an elegant structure, with complexity coming from gentle toast and.<br /><br />Harvest:<br />We hand-picked the Pinot Noir from March 24th until April 11th, at a point of excellent flavour concentration and acid balance.<br />Vinification: The Pinot Noir fruit was all de-stemmed before being gravity fed into the open topped fermentation vessels. The grape skins were gently plunged with an average<br />of 18 days skin contact. After fermentation the wines were matured in French oak for 11 months, of which 35% was new. Chardonnay, Pinot Blanc, Sauvignon and Gewürztraminer, aged on the fine yeast and matured in wood,<br />merge into a cuvée with remarkable structure and elegance. All this combined in a unique packaging. The outer shell: Unique in elegance and sophistication.This year's<br />image in the bottle depicts the 'youthful Bacchus' and is attributed to the Caravaggio school around 1600. Bacchus reaches for the grape, the 'materia prima', without<br />which this unique wine would not exist. The grape and the wine are united in the bottle. In between are other dimensions, from the harvest to the fermentation process to<br />the ripening, and what else can resonate and stimulate beyond the wine.<br /><br />Description: Strong straw-yellow colour, a fruity hint of exotic scents. A wine with a great structure, elegant, rich in aromas and of remarkable longevity. These characteristics derive from a very low yield per hectare, the delayed harvesting of<br />selected grapes and maturation in steel for at least one year before bottling.<br /><br />Type of wine: dry white.<br />Area of origin: Castelli di Jesi hills in the area known as Classica.<br />Soil: medium-textured, with areas rich in clay alternating with sandy areas.<br />Grapes: pure Verdicchio.<br />Yield per hectare: 70 q<br />Processing: harvesting of the grapes when fully ripe with accurate selection; soft pressing of the whole bunches, cleaning of the cold must and fermentation at low<br />temperature.<br />Ageing: 15 months in stainless steel tanks at 10° C on the noble lees and maturation in the bottle for 4 months in a thermo-conditioned room.<br />Colour: straw yellow.<br />Intense, elegant, fruity bouquet with hints of citrus fruits.<br />Taste: persuasive, soft, with great character, long lasting flavour, warm and elegant.<br />Consumption: up to 10 years.<br />Recommended with first courses, fish and white meat with aromatic herbs.<br />Serving temperature: 12° C<br />

Réserve della Contessa - the feminine wine.<br /><br />Its secret is fineness and elegance, one almost wants to say noblesse. A white wine of delicate colour and delicate aromas, as if made to accompany festive hours.<br /><br />Grape varieties: Pinot Blanc 60 %, Chardonnay 30 %, Sauvignon Blanc 10 % (Terlaner).<br />Colour: strong yellow with greenish reflections.<br />Aroma and taste: fresh scent of apples, apricots and a hint of sage. Dense and elegant, with a lot of melting, long lasting.<br />Site and soil: Two thirds of the grapes come from Lieben Aich in Terlan and one third from Campan in Kaltern. In Terlan Lieben Aich we have a warm west-facing slope at<br />300 m above sea level, with water-permeable, sandy loam soil on porphyry weathered rock. Kaltern Campan is a cool, east-facing slope at 500 m above sea level. The soil is<br />a strong loamy limestone soil with rock deposits from ice-age glaciers.<br />Vinification: The destemmed grapes remained in the press for six hours for maceration to extract aroma and structure from the skins. Fermentation took place in wooden<br />barrels, partly spontaneously, with the grape's own yeasts. During the six months of ageing on the fine lees, the aroma and flavour were refined.<br />Serving temperature: 10 - 12 °C.<br />Goes well with: starters, fish and white meat.<br />

This continuation of favourable weather conditions is unprecedented, and<br />the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is<br />driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the<br />promise of a wine full of freshness and energy.<br /><br />NOSE<br />The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla<br />and warm, delicately toasted brioche.<br /><br />PALATE<br />The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is<br />extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.<br /><br />CULINARY PAIRINGS<br />The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.<br />The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works<br />perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.<br />
