The winter of 2017 ended a five-year drought with January recording the most rainfall in over 20 years. The abundant rainfall continued into March, causing a modest delay in<br />budbreak, and pushing bloom back by two weeks. Increased soil moisture allowed for healthy vine growth and development. The summer, in turn, was warm and punctuated<br />by occasional heat waves. Despite Mother Nature's variability, favorable weather in August provided optimal conditions for fruit development and maturation. Superb flavors<br />and excellent ripening led to an earlier than expected harvest, which commenced on the 5th of September.<br /><br />The Opus One 2017 offers a harmonious aromatic balance of rich dark fruit, stems of roses, and earthy forest floor. The juicy entry offers a round, silky mouthfeel with just<br />enough acidity to complement the satin texture. This seductive wine shows flavors of black cassis, black cherry and a hint of cocoa powder. The fine-grained, plush tannins<br />evolve into a long, supple finish. <br />The elegant Marlborough red<br /><br />A balanced and lively expression of Pinot Noir from the Marlborough region.<br /><br />The 2017 growing season began with ideal spring conditions; warm temperatures and few frost events encouraged good canopy growth. Settled weather over flowering led to<br />high potential crops, fruit thinning was widely employed to reduce yield and achieve optimum vine balance. Fastidious canopy management throughout the mild and sunny<br />growing season ensured fruit developed, then ripened, at an ideal rate. The excellent weather during the ripening season was interrupted by rain events during the harvest.<br />The single-minded quality focus of the viticulture and winemaking teams, with hour by hour assessment, led to optimum picking decisions. Our low-yielding, early-ripening<br />vineyards with their open canopies, stood us in good stead in what was a tricky vintage across Marlborough and New Zealand.<br /><br />Nose: Appealingly aromatic, the 2017 Pinot Noir reveals notes of Morello cherry and bramble.<br />Palate: Fine, silky tannins and juicy acidity provide an elegant structure, with complexity coming from gentle toast and.<br /><br />Harvest:<br />We hand-picked the Pinot Noir from March 24th until April 11th, at a point of excellent flavour concentration and acid balance.<br />Vinification: The Pinot Noir fruit was all de-stemmed before being gravity fed into the open topped fermentation vessels. The grape skins were gently plunged with an average<br />of 18 days skin contact. After fermentation the wines were matured in French oak for 11 months, of which 35% was new. <br />2009: THE PINNACLE OF MATURITY<br /><br />2009 brings to a close in the best possible way a prodigious, sunny, bold and generous decade. This continuation of favourable weather conditions is unprecedented, and<br />the succession of vintages has allowed us to explore the new frontiers of grape maturity in Champagne. Dom Pérignon Vintage 2009 is the result of two movements: one is<br />driven by nature and the other is the creative ambition of the Maison's Chef de Cave. This synergy allows us to taste the ripest and richest fruit, the grapes at their best, the<br />promise of a wine full of freshness and energy.<br /><br />NOSE<br />The notes of guava and spicy green grapefruit zest blend with those of stone fruit, white peach and nectarine. The wine breathes, complemented by notes of woody vanilla<br />and warm, delicately toasted brioche.<br /><br />PALATE<br />The fruit notes are majestic, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of coherence that dominates. The intensity is<br />extraordinarily restrained. All the sensations converge and persist, silky, saline and lymphatic, bitter and iodized.<br /><br />CULINARY PAIRINGS<br />The Dom Pérignon Vintage 2009 is a wine that needs stimulation. It requires a context and lends itself to being enhanced by strong contrasts.<br />The champagne evokes vegetable and mineral worlds, which manifest themselves, for example, through a carbonara with sea urchins and cardamom mousse. It works<br />perfectly with dishes with a particular texture: for example, octopus sautéed in butter marinated in Sicilian orange juice.<br />

In white: pressed quickly, after rapid separation of the<br />juices from the skins; in red: by prolonged maceration of the juices with the skins. The blend consists of a first pressing of a majority of Pinot Noir and Chardonnay. Reserve<br />wines made up of 25 different vintages blended since 1985, in proportions of up to 50%.<br />Ageing: 3 years on the lees followed by 3 to 4 months in the bottle after disgorgement and before marketing<br />Colour: light golden copper, raspberry when young and salmon when ripe<br />Bouquet: lively and fruity, with aromas of currants and fresh red fruit. In a balanced battle, the two wrestle closely for the<br />upper hand. The wine impresses with its fascinatingly changeable personality and makes opening each bottle an exciting surprise.<br /><br />VINIFICATION<br />Separate vinification of the two varieties, partly spontaneous fermentation, eight-month ageing on the fine lees in wooden or steel barrels.<br /><br />SITUATION / SOIL<br />Höfl unterm Stein in Söll near Tramin is situated on a south-eastern slope at 480 to 550 m above sea level. TWC comprises single-varietal wines in perfection from a highly limited<br />production.
