Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of our<br />winemaker.<br /><br /><br />Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to<br />early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the<br />summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,<br />fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. The red wines, with great finesse and elegance,<br />indicate great ageing potential.<br />Grape variety: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%.<br />Yield: 45 hl/ha<br />Altitude: from 400, more from 500 - 600 metres<br />Exposure: south-east 90%, south 10%.<br />Harvest: end of September - mid-October<br />Bottles produced: about 48,000, 760 magnums and some large sizes<br />Soil: calcareous gravel mixed with clay<br />Age of vines: 10 - 40 years<br />Climate: wide temperature range due to hot days influenced by the Mediterranean climate and cold nights with very fresh winds coming from the mountains<br /><br />Vinification: the grapes are harvested entirely by hand and placed in small containers that keep them intact; immediate pressing; slow fermentation at a controlled<br />temperature (18°-20°) in wooden barrels (30-40 hl), in which malolactic fermentation also takes place; racking of the must by natural sedimentation.<br /><br />AGING: Refining in large wooden barrels (30-40 hl), always in contact with the yeasts until the end of August. CHARDONNAY<br />Fragrant, structured and elegant<br />Having become part of the range since the 1986 vintage, Chardonnay was the second wine to be marketed by the estate, after Sauvignon Blanc. Cloudy Bay Chardonnay<br />comes from vineyards located in the sub-regions of Omaka, Brancott, Rapaura and Renwick and requires the same time and precision as a great Burgundy white: around 2<br />years of oak ageing.<br />TASTING NOTES<br />Immediately seductive and perfumed, with aromas of white peach, apricot, flowering trees and warm hay. The palate is concentrated and inviting: hints of apple and pear<br />balanced by vanilla, hazelnut and a delicate saline note. The finish is long and fascinating, refreshed by a hint of citrusy acidity.<br />

Gewürztraminer Passito DOP...
Vinification<br /><br />The grapes are harvested in September and left to dry for 4 months in a well-ventilated room. In December, the dried grapes are selected again. Drying results in a 2/3<br />weight loss, as well as a concentration of sugar, aromas, acidity and tannins. Due to the high sugar content, the yeast cannot carry out the fermentation completely and<br />thus a natural residual sweetness remains. After a fermentation of 6 weeks, a longer bottle fermentation takes place.<br />Tasting<br /><br />The 'Cashmere' Gewürztraminer Passito presents itself with a golden yellow colour with a light amber hue. Its bouquet is exquisite and intensely aromatic: dried apricots,<br />candied fruits, rose petals, a hint of orange and caramel. On the palate, the Passito is very concentrated, with a harmonious interplay between inviting sweetness and<br />refreshing acidity, elegant and of exquisite level.<br />
