Vintage: the weather conditions make the 2019 viticultural year a challenge for our winegrowers. A relatively mild winter and early spring were followed by a wet and cool<br />April and May. After flowering, which did not occur until June, the weather situation turned around and it became hot and dry. Late summer delayed the ripening of the<br />grapes with some rainfall and below-average temperatures. Harvesting of the healthy grapes began in early September and continued until the end of October.<br />Tasting notes: bright yellow, fruity aroma of ripe peach, mango and coconut milk, full mouthfeel with lots of ripe fruit on the palate, juicy finish.<br /><br />Recommendation: try it as an aperitif, with light starters, summer salads, asparagus dishes, grilled fish or with mild sliced and fresh cheeses!<br /><br />Vinification: Whole cluster pressing of ripe and above all perfectly healthy grapes, 18-hour maceration, natural must clarification, slow fermentation at a controlled<br />temperature of 18 °C (approx. 50% spontaneous fermentation in large wooden barrels), 5-month ageing on the fine lees, filtration and bottling in March.<br /><br />Vineyard:Steep south/south-western slope at 700 m above sea level with sandy-loamy porphyry weathered soil.<br /><br />Grape variety: Kerner<br />Age of the vines: 10 - 30 years<br />Drinking temperature: 10 - 12 °C<br />Yield: 65 hl/ha<br />Method of cultivation: wire frame + pergola<br />Alcohol: 14,0 %<br />Residual sugar: 4,0 g/l<br />Acidity: 6,4 g/l<br />Contains sulphites<br />

Pinot Grigio PUITEN<br /><br />A finesse-rich classic from selected vineyards. A wine with seductive fruit sweetness, spicy fragrance and excellent acidity.<br /><br />Description: Strong green-yellow, pleasant fruit aromas of quince, pear and honeydew melon.<br />honeydew melon. A very dense versatile Pinot Grigio on the palate with fresh acidity.<br /><br />Ageing potential: 3-5 years.<br /><br />Recommended food: Pair with appetizers of all kinds, seafood and fish, and lightly spiced white meat dishes.<br /><br />Serving temperature: 10-12° C.<br /><br />Grape variety: Pinot grigio/Ruländer.<br /><br />Vineyards: Vineyards on a gentle slope with moderately heavy gravelly-sandy soil.<br /><br />Yield: 50 hl/ha<br /><br />Vinification: Cool fermentation at 18° C in stainless steel for about 14 days. PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a<br />long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in<br />Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the<br />Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the<br />marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in<br />bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The<br />strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable for<br />chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.<br />

It is the result of decades of living passion for<br />Lagrein and is probably one of the most authentic and successful interpretations of the autochthonous South Tyrolean grape variety. The head of character.<br />The perfect symbiosis of tradition and modernity.<br /><br />IN THE VINEYARD<br />The grapes of our classic Lagrein ripen in the vineyards in the sun-drenched basin of Bolzano at an altitude of 260 m, deeply rooted in sandy alluvial soils with a southern<br />exposure.<br />IN THE CELLAR After temperature-controlled fermentation in stainless steel at 28°C for 8 days, the wine is then matured in large wooden barrels of 30 - 50 hl.<br /><br />Colour: strong purple red<br />Aroma: invitingly open and complex with notes of violets, chocolate, ripe plums and spices<br />Taste: elegant with a velvety structure, densely woven tannins and light bitter almond tones.<br />Alcohol: 13.50 % vol.<br />Acidity: 4.80 g/l<br />Residual sugar: 2.40 g/l<br /><br />TASTING NOTES<br />This Lagrein has a strong purple colour. Cabernet 'Istrice' 2020<br />South Tyrol DOC<br /><br />Cabernet 'Istrice' was Elena Walch's first red wine. At that time consisting of a predominant proportion of Cabernet Franc and only a little Cabernet Sauvignon, the wine<br />showed 'its spines', just like the little hedgehogs in the park of the family winery. Today, the percentage of 'Istrice' has exactly reversed with 90% Cabernet Sauvignon and<br />about 10% Cabernet Franc. Although it shows less of its spines, it has gained in elegance and finesse and continues to be one of the favourites at Walch.<br /><br />'The Cabernet 'Istrice' captivates with a strong intense ruby red and with stimulating fruity aromas in the nose, with red forest berries and heart cherries as well as seductive<br />spice with white pepper and chocolate. On the palate, the wine surprises with refreshing richness and structure, with elegant, precise tannins and fruity-spicy density, as<br />well as a long, juicy finish.'<br /><br />LESE 2020<br />Spring 2020, with its beautiful weather and warm temperatures, spring flowers in the garden and thick blanket of fresh snow on the mountains, led to the relatively early<br />development of the vines, which settled down again with the cooler temperatures in June. After a warm midsummer, the harvest started in the first days of September. The<br />autumn was characterised by warm days and cool nights, but also by some freak weather, whereby the careful cultivation of the vineyards in early summer was noticeable.<br />The 2020 vintage resulted in wines of great South Tyrolean typicity: The young white wines stand out with fresh liveliness and clear aromatic expression, the red wines show<br />very good structure and straight, fine fruit.<br /><br />VINIFICATION<br />Traditional maceration of about 10 days in steel tanks. Followed by malolactic fermentation in wooden barrels.
