Description<br /><br />Very deep violet/black colour. Highly dense bouquet, chassis, blackberries. Very powerful yet elegant attack, densely concentrated tannins on the palate, powerful<br />backbone and enormously long finish.<br /><br />High ageing potential: 10-15 years.<br /><br />Recommended food: Goes well with strong dishes with red meat, grilled or roasted, but especially with game and with spicy cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Cabernet Sauvignon.<br />Sites: The vineyard site is located at an altitude of 430 m above sea level with optimal sun exposure. A rather dry site, with sandy, gravelly moraine soil.<br />Vinification: Maceration for 10 days with gentle circulation of the marc followed by maceration for a further 10-14 days. Racking of the young wine into new/used barriques,<br />malolactic fermentation, several transfers of the wine during the 18 months of ageing. Pinot Noir LAFÓA<br />This Pinot Noir is full of character, elegance and finesse.<br />Pinot Noir. Intense fruit aromas combine with firm tannins.<br />tannins. It needs attention, time to mature and likes to play the leading role: as the crowning glory of a festive table or even as a proud solitaire.<br /><br />Grape variety:<br />Pinot Noir<br />Site and soil: Mazzon, called 'Mason' by us to avoid confusion with the larger site above Neumarkt. Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing high plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam<br />and interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones. After completing malolactic<br />fermentation,the wine matures in 25-hectolitre barrels of Slavonian oak.<br />Bottling normally takes place in August. The Barolo Ginestra Casa<br />Matèthen stays in the binning cellar for 8-10 months before release.<br />

Chardonnay 'Cardellino' 2022<br />South Tyrol DOC<br /><br />The Chardonnay 'Cardellino' was the first wine of Elena Walch and is still probably the most popular wine of the winery. According to an old tale, the goldfinch - the<br />'Cardellino' - builds its nest only in Chardonnay vines, while it does not nest in other grape varieties. To this faithful little bird Elena Walch has thus dedicated her debut, an<br />elegant and characterful Chardonnay, which has won many lovers with minerality, freshness, coupled with suppleness and excellent structure. The Chardonnay 'Cardellino'<br />has long become a classic of South Tyrol and continues to be the most popular wine at the table of the Walch family. A wine to which one remains faithful, just as the<br />Cardellino remains faithful to its Chardonnay.<br />The Chardonnay 'Cardellino' convinces with a strong, straw-yellow color, with a complex play of fruity aromas, citrus and orange peel, some lime blossom, mineral richness<br />and a spicy hint of tobacco. On the palate, this classic from Elena Walch surprises with exciting freshness and mineral race, with elegance and juicy length: inviting,<br />refreshing and easy to drink.<br /><br />COURSE OF THE VINTAGE 2022<br />An excellent vintage 2022 awaits you! Thanks to the warm, stable summer, grapes of the very best health and with balanced values have reached our cellar. The 2022<br />vintage began with a warm spring, which led to an early start of flowering. The following summer was consistently dry and warm, and hot in mid-summer. The drought did not<br />lead to any problems, not least thanks to our irrigation systems and meteostations in the vineyard. The warm summer months resulted in very healthy grapes of very good<br />quality and ripeness. The acidity levels were somewhat lower due to the vintage, but well balanced and were supported by targeted foliage work in the summer, as well as a<br />somewhat earlier harvest. The first grapes were harvested at the end of August - as always completely by hand. Overall, the wines are complex, with great structure and very<br />good fruit.<br /><br />VINIFICATION Gentle pressing, static clarification, fermentation at a controlled temperature of about 20°C, long contact with the yeast after fermentation. Part of the must<br />(about 15%) is fermented in French oak barrels where it matures for six months.
