Fermentation in cement, punctuated by continuous micro-oxygenation, which continues into post-fermentation, preparing the wine for the encounter with<br />alcohol, to initiate the first 'act of giving DOC Marsala'.<br />INNAMORATION: Encounter between wine, siphon (grape must giving DOC Marsala mutated - i.e. whose fermentation has been stopped - added with ethyl alcohol of vine<br />origin), cooked must and a small percentage of alcohol<br />AGING METHOD: 4 years. <br />Pratto<br /><br />Pratto represents a challenge that we wanted to take up, going beyond conventional schemes while maintaining unaltered respect for the territory. In this late harvest, the<br />aromaticity of Sauvignon vinified in stainless steel, the softness of Chardonnay and the finesse of Turbiana meet harmoniously with an exclusive result. The nose shows<br />notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating<br />the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return. Per la produzione del Cabernet-Merlot Sanct Valentin vengono utilizzate solo uve<br />provenienti da vigneti particolarmente soleggiati. La resa è estremamente bassa e i vitigni vengono vinificati singolarmente. Il Cabernet-Merlot Sanct Valentin, prodotto per la<br />prima volta nel 2013, è un vino rosso di prima classe, estremamente complesso e con tannini fini. Passito Comtess<br />Sanct Valentin 2021<br />Passito is the Italian term for wines that are made from air- and sun-dried, almost rosined grapes. This usually takes place in our vineyard, i.e. the grapes remain on the vine<br />until the end of the year. The elegant Passito Comtess delights with intense fruit, a creamy-soft body, with a long finish and flatters the palate with racy-fresh acidity. DER BLAUWAL Riserva 2009 Trento DOC<br /><br />From Chardonnay grapes<br /><br />Der Blauwal is our classic method reserve. A single vineyard, a single vintage and a single grape variety. Time is a precious commodity: it takes at least 84 months on the<br />lees to transfer the complex history of the vintage, the identity of the vineyard and the characteristics of the variety into the wine. It is an extra brut with a dosage of about 3<br />g/l. The enveloping taste and structure are merited by the quality of the grapes from old vines and the ripeness of the fruit. PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a<br />long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in<br />Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the<br />Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the<br />marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in<br />bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The<br />strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable for<br />chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.<br />
