Stoan 2020 Cuvèe weiss...

Stoan 2020 Cuvèe weiss...

Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of our
winemaker.

Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to
early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the
summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain,
fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. The red wines, with great finesse and elegance,
indicate great ageing potential.
Grape variety: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%.
Yield: 45 hl/ha
Altitude: from 400, more from 500 - 600 metres
Exposure: south-east 90%, south 10%.
Harvest: end of September - mid-October
Bottles produced: about 48,000, 760 magnums and some large sizes
Soil: calcareous gravel mixed with clay
Age of vines: 10 - 40 years
Climate: wide temperature range due to hot days influenced by the Mediterranean climate and cold nights with very fresh winds coming from the mountains

Vinification: the grapes are harvested entirely by hand and placed in small containers that keep them intact; immediate pressing; slow fermentation at a controlled
temperature (18°-20°) in wooden barrels (30-40 hl), in which malolactic fermentation also takes place; racking of the must by natural sedimentation.

AGING: Refining in large wooden barrels (30-40 hl), always in contact with the yeasts until the end of August. After bottling, the wine is left in the bottle for a minimum of 3
months for further ageing, bringing the total ageing period to a minimum of 14 months.
to a minimum of 14 months.

Alcohol content: 13,5 % vol.
Total acidity: 5,9 g/l
Residual sugars: 1.8 g/l
Gewürztraminer 'Kastelaz'...

Gewürztraminer 'Kastelaz'...

Gewürztraminer Vigna 'Kastelaz' 2020

The Vigna 'Kastelaz' is a unique steep slope directly above the wine village of Tramin and is one of the exclusive southern vineyards of South Tyrol. A 'Vigna' is an
additional designation of origin; the term stands for a precisely delineated and mapped vineyard. Due to its extreme slope of up to 63 degrees, the Vigna 'Kastelaz' is
elaborately laid out in narrow terraces. Moreover, it is entirely south-facing - a rarity in South Tyrol. Kastelaz is a side fan of postglacial origin and consists of a layered
structure of loose limestone soils interspersed with sand and hard rock such as granite and porphyry. The microclimatic conditions of the Vigna 'Kastelaz' are also rich in
contrasts: during the day the vines can benefit from the warm, extremely sunny southern exposure, while from late afternoon a strong wind and later the fresh evening
mountain air provide cool temperatures. Here, between 330 and 380 metres above sea level and with extremely low vine yields, some of Elena Walch's absolute top wines
are produced.

'The Gewürztraminer Vigna 'Kastelaz' has long been one of the most famous Gewürztraminers on the international scene. It presents itself with a rich, golden yellow colour
and a beguilingly complex bouquet: elegant and mineral, with aromas of roses and lychee as well as some acacia honey in the background. The wine is also convincing and
complex on the palate: with an elegant structure, stimulating acidity, harmonious, spicy freshness and a delicate, juicy finish. A wine with a lot of finesse and character!'

LESE 2020
Spring 2020, with its beautiful weather and warm temperatures, spring flowers in the garden and thick blanket of fresh snow on the mountains, led to the relatively early
development of the vines, which settled down again with the cooler temperatures in June. After a warm midsummer, the harvest started in the first days of September. The
autumn was characterised by warm days and cool nights, but also by some freak weather, whereby the careful cultivation of the vineyards in early summer was noticeable.
The 2020 vintage resulted in wines of great South Tyrolean typicity: The young white wines stand out with fresh liveliness and clear aromatic expression, the red wines show
very good structure and straight, fine fruit.
VINIFICATION Before pressing, the grapes are left to macerate for about 6 hours. Gentle pressing and static pre-clarification of the must by cooling. Fermentation in steel
tank at controlled temperature of 18°C, long contact with yeast after fermentation.

Grape variety: 100% Gewürztraminer
Alcohol: 14,00% Vol
Denomination: South Tyrol DOC
Residual sugar: 7,8 g/L
Total acidity: 5,5 g/L
Shelf life: 3-8 years
Vinsanto Chianti Classico...

Vinsanto Chianti Classico...

Marchese Antinori Vinsanto Chianti Classico DOC 2016

Climate: After an autumn and winter that tended to be mild and not very rainy, spring 2016 began with good weather in Chianti Classico, bringing bud break about 10 days
earlier than the historical average. Starting in May and during the first half of June, rainfall and average cool temperatures were recorded, but did not affect the decisive
phases of flowering and fruit set. The summer up to the end of August was hot, dry and without heat peaks: optimal conditions for maintaining an excellent vegetative-
productive balance and ensuring constant growth of the grapes. Harvesting took place between 7 and 10 September.

Vinification: the grapes, sourced exclusively from the vineyards of the Antinori estates in Chianti Classico, were carefully selected and harvested in boxes; they were then
placed by hand on the special mats of the appassitoio (drying room) of the Tignanello estate or on the penzane of the Pèppoli estate (mobile frames where the bunches are
hung in suspension). The grapes, left to dry until the end of December, were then softly pressed in order to maintain their organoleptic and aromatic characteristics. The
must obtained was put into the typical 'caratelli', made from different types of wood and with a capacity varying between 50 and 200 litres, where the long, slow alcoholic
fermentation took place. The wine remained in the kegs for about 3 years and was then blended and finally bottled.

Historical data: The production of Vinsanto in Tuscany dates back at least to medieval times: it is considered a true regional speciality and the Antinori family has always
produced it. The first vintage of Vinsanto Tenute Marchese Antinori (a 'natural' production vinsanto) was, however, 1987.

Tasting Notes: The Marchese Antinori Vinsanto has a dark amber colour with golden reflections. On the nose sweet notes of dried fruit, such as hazelnut and date, combine
with an intense sensation of candied orange, honey, and a slight hint of cinnamon. On the palate it is full, soft, supported by a pleasant freshness that makes it lively and
pleasant. Good persistence on the palate.
Gewürztraminer Passito DOP...

Gewürztraminer Passito DOP...

Vinification

The grapes are harvested in September and left to dry for 4 months in a well-ventilated room. In December, the dried grapes are selected again. Drying results in a 2/3
weight loss, as well as a concentration of sugar, aromas, acidity and tannins. Due to the high sugar content, the yeast cannot carry out the fermentation completely and
thus a natural residual sweetness remains. After a fermentation of 6 weeks, a longer bottle fermentation takes place.
Tasting

The 'Cashmere' Gewürztraminer Passito presents itself with a golden yellow colour with a light amber hue. Its bouquet is exquisite and intensely aromatic: dried apricots,
candied fruits, rose petals, a hint of orange and caramel. On the palate, the Passito is very concentrated, with a harmonious interplay between inviting sweetness and
refreshing acidity, elegant and of exquisite level.
Moscato Rosa DOC 2016 375ml...

Moscato Rosa DOC 2016 375ml...
South Tyrol Moscato Rosa DOC

A rare pleasure in a small edition

Castel Sallegg and Moscato Rosa. These two terms have long belonged together in South Tyrol. Not without reason, it was the Princes of Campofranco, ancestors of the
current owner Count Georg von Kuenburg, who in 1892 brought this noble grape variety with them when they moved from Sicily to Sallegg Castle in Caldaro and planted it in
the warmest soil on Lake Caldaro, where it thrived magnificently. Today, the rose muscatel is one of the rarest varieties in the world. The Moscato Rosa of Castel Sallegg
grows at the Seehof in St. Josef am See at 230 m above sea level on the traditional pergola.

The production of this wine is very limited: Depending on the weather, Moscato Rosa may not be bottled at all in certain years. Otherwise, up to 1,000 bottles are bottled per
vintage.

Tasting Notes:
A dessert wine whose colour is characterised by a dense raspberry red.
On the nose, rich aromas of roses, fine fruit components distantly reminiscent of lychee and ripe, very complex raspberry flavours, supported by an elegant spiciness in the
background.
Very opulent, repeating the aromas of the fragrance, this powerful wine type presents itself on the palate.
Serving temperature: 10-14°C
Shelf life: Up to 30 years. Moscato Rosa is Castel Sallegg's most famous wine and, as a variety, is one of the rarest in the world.
Food recommendation: Ideal with mature, spicy cheeses, foie gras, desserts with berry fruits (but with sugar restrained). Also perfect as a stand-alone wine in the sense of
a meditation wine.
Grape variety: 100% Moscato Rosa - Selection Kuenburg: Autochthonous variety.
Site: Kaltern - Seehof: 230 m above sea level. Gravel and reddish, ground Grödner sandstone. Warm, air-permeable soils with a special microclimate in the immediate
vicinity of Lake Kaltern.
Growing system: Traditional pergola
Yield per vine: 0.5 kg - 8 hl/ha due to natural trickling.
Vinification: The grapes are harvested very late with a minimum gradation of 32°KMW (160 Öchsle). This is followed by a week of maceration in stainless steel tanks.
Maturation: 1 year in stainless steel barrels, followed by 12 months in the bottle.
Alcohol: 11 ,7 %
Acidity: 7,4 g/l
Residual sugar: 180,8 g/l
