Already on April 10, on the sunny sites<br />around the monastery, we saw the first shoots. Thanks to mild spring weather, there were<br />no problems with frost. During the summer the conditions were good as well, with normal<br />temperatures and average rainfall. There were no extreme weather event and so harvest<br />started about 10 days early on September 14th. Unfortunately, the autumn was a little bit<br />rainy and therefore the diurnal temperature shift was less extreme than usual. In order to<br />get healthy grapes, the harvest dates were brought forward and so harvest was already<br />completed by mid-October.<br />The wines of the 2020 vintage are delicate, fresh and fruity with moderate alcohol and an<br />appealing acidity. Similar to the 2019 vintage.<br />

Vintage: the weather conditions make the 2019 viticultural year a challenge for our winegrowers. A relatively mild winter and early spring were followed by a wet and cool<br />April and May. After flowering, which did not occur until June, the weather situation turned around and it became hot and dry. Late summer delayed the ripening of the<br />grapes with some rainfall and below-average temperatures. Harvesting of the healthy grapes began in early September and continued until the end of October.<br />Tasting notes: bright yellow, fruity aroma of ripe peach, mango and coconut milk, full mouthfeel with lots of ripe fruit on the palate, juicy finish.<br /><br />Recommendation: try it as an aperitif, with light starters, summer salads, asparagus dishes, grilled fish or with mild sliced and fresh cheeses!<br /><br />Vinification: Whole cluster pressing of ripe and above all perfectly healthy grapes, 18-hour maceration, natural must clarification, slow fermentation at a controlled<br />temperature of 18 °C (approx. 50% spontaneous fermentation in large wooden barrels), 5-month ageing on the fine lees, filtration and bottling in March.<br /><br />Vineyard:Steep south/south-western slope at 700 m above sea level with sandy-loamy porphyry weathered soil.<br /><br />Grape variety: Kerner<br />Age of the vines: 10 - 30 years<br />Drinking temperature: 10 - 12 °C<br />Yield: 65 hl/ha<br />Method of cultivation: wire frame + pergola<br />Alcohol: 14,0 %<br />Residual sugar: 4,0 g/l<br />Acidity: 6,4 g/l<br />Contains sulphites<br />

A wine with seductive fruit sweetness, spicy fragrance and excellent acidity.<br /><br />Description: Strong green-yellow, pleasant fruit aromas of quince, pear and honeydew melon.<br />honeydew melon. A very dense versatile Pinot Grigio on the palate with fresh acidity.<br /><br />Ageing potential: 3-5 years.<br /><br />Recommended food: Pair with appetizers of all kinds, seafood and fish, and lightly spiced white meat dishes.<br /><br />Serving temperature: 10-12° C.<br /><br />Grape variety: Pinot grigio/Ruländer.<br /><br />Vineyards: Vineyards on a gentle slope with moderately heavy gravelly-sandy soil.<br /><br />Yield: 50 hl/ha<br /><br />Vinification: Cool fermentation at 18° C in stainless steel for about 14 days. 2018 CHATEAU CROIX MOUTON 'BORDEAUX SUPERIEUR'<br />THE YEAR.<br />The M printed on the label of this fine-tasting and fleshy Bordeaux Supérieur wine marks the personality and particularities of each vintage and changes colour every year.<br />This cuvée from Château Croix Mouton, which dominates the Dordogne, is made exclusively from Merlot, the emblematic grape variety of the right bank of the Garonne, and<br />has a deep ruby red colour with beautiful shiny reflections. On the palate, small, acidic red fruits (mainly red plum, cherry) follow one another. On the palate it is full-bodied<br />and juicy, full of charming finesse. This wine is best appreciated when young, when its fruity bouquet shows all its vivacity.<br />THE CHÂTEAU CROIX MOUTON ESTATE<br />Château Croix Mouton is located in the town of Lugon on the right bank of the Bordeaux River and covers almost 70 hectares of vines. It is owned by the Janoueix family and<br />thrives on the clayey soil of Carney Island. The 2019 grape varieties focus on Merlot (96%), complemented by Cabernet Franc (2.5%), Malbec (1%) and Petit Verdot (0.5%).<br />The vines are on average 38 years old. The planting density is about 3,600 to 6,000 vines per hectare.<br />The work in the vineyard is meticulous and includes tillage, grassing, thinning and some leaf thinning. After sorting at harvest, vinification takes place in concrete and<br />stainless steel tanks with openings and regular puncturing. Fermentation takes place under temperature control (maximum 26-27 °C). The maturation period is between<br />three weeks and one month. Maturation lasts between three and four months on the fine lees in barrels (20%) and in vats with or without wood (80%).<br />The top Bordeaux produced by the estate are pleasant, fruity wines that tend to be drunk at a young age. Gourmet and fleshy wines that are also quite accessible.<br />

On the label the Latin phrase 'Sator Arepo Tenet Opera Rotas' means 'the farmer with the plough directs the work'. We chose it when we acquired the vineyard and<br />became its owners. It is a vineyard on the hill of Mango, a village in the Langa. We bought it in 1990. The letter G highlighted on the label underlines the transmission from<br />father to son of the knowledge of the vineyard: Giuseppe, Giacomo and Giuseppe again.<br /><br />Denomination: Moscato d'Asti DOCG.<br />Grapes and Vineyard: Produced with 100% Moscato d'Asti grapes from our own vineyard in Mango.<br />Winery: Maceration with the skins for a few hours in a horizontal press followed by pressing. White vinification with prise de mousse in temperature-controlled autoclaves for<br />20 days at about 4°. At the end of fermentation, stabilisation with refrigeration at - 4°, microfiltration and refinement in the bottle for a few weeks.<br />Tasting: Brilliant straw yellow colour, fine foam and rich perlage. Extraordinarily fresh and very varied bouquet, with fresh fruit, orange blossom, rose and musk among the<br />many notes. Sweet but very graceful taste, aromatic characteristic of grapes, delicious and with long persistence. Accompanies: fruit desserts, fruit, dry pastries, panettone,<br />hazelnut cake, special cheeses such as Castelmagno. Very pleasant as an aperitif and as a thirst-quenching drink at any time of day.<br />Serving recommendations: Serve at 6 - 8°.<br />

On the palate, these fruity impressions continue, while the wine still has a fine acidity that never<br />makes it seem too lush despite its concentration. A Gewürztraminer that can convince with aromatic length.This Gewürztraminer is a selection from the best vineyards of<br />our estate Kolbenhof in Söll / Tramin. Thanks to the special microclimate, the ideal orientation and the age of its vines, the Kolbenhof estate is one of the great cru sites for<br />South Tyrolean Gewürztraminer. Only the classification 'Vigna' guarantees the origin of a site wine in South Tyrol.<br />HOFSTITY CLASSIFICATION: Site wine<br />GRAPE VARIETY: Gewürztraminer<br />SOIL: Loam and limestone gravel<br />VINIFICATIONAND RIPENESS: after delivery, the grapes are lightly crushed and the must is left in contact with the skins for a few hours to bring out the fruitiness of the<br />wine. After a gentle pressing and natural sedimentation of the lees, the must ferments at a controlled temperature. After fermentation, the Kolbenhof Gewürztraminer<br />matures for another 8 months on the fine lees. The fine yeast is stirred weekly (battonage).<br />SERVING TEMPERATURE: 8° -10° C<br />RECOMMENDATION FOR COOKING: delicious on its own, it can also be combined with crustaceans, more sophisticated fish preparations and Asian dishes.<br />

(Milena Vaira)<br />DESCRIPTION: Moscato is a beautifully aromatic variety that is deeply rooted in the winemaking heritage of Piemonte. We pick our grapes at full ripening, when the berries<br />start to be gold in color. Our dream is to bring all the perfumes, the freshness and the texture intact to the bottle.<br />VARIETY: 100% Moscato bianco.<br />VINEYARD AND TERROIR: Steep, old estate vineyards.<br />HARVEST AND WINEMAKING: Moscato harvest starts usually around the end of August. Picking decisions are individual to each site. Aldo always gives few more days of<br />ripening to this variety, which is a challenging decision in a crucial period yet rewarded by the beautiful fruits. Cold settling followed by a slow fermentation at low<br />temperature. Fermentation is stopped by drop of temperature, and the wine is kept refrigerated until bottling.<br />TASTING NOTES: Beautiful soft color with green reflections. Aromas of fruit with yellow flesh: apricot, peach, exotic fruits. Then elderflower, pear and a hint of sage.<br />Delicate and persistent bubbles, refreshing and cleansing the palate. The balance between sweetness and freshness continues in a long and creamy finish,<br />surprisingly savory.<br />
