Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing high plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam<br />and interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones. The bouquet is reminiscent of<br />nettle, apples, green peppers and tropical fruits.<br />With a harmonious balance of acidity and minerality, notes of elderberry, banana and vanilla enrich the lively character of this wine.<br />Thanks to its excellent quality, this wine has been included in the Bernardi collection. Cultivation area<br /><br />Years of testing by vinification of small quantities of wine have finally led us to the ideal site, the monopollage Ganger. It is located in Mazon, at an altitude of 360 to 380<br />metres above sea level, facing southwest, with a slope of 3-5%, and is characterised by a unique microclimate and deep clay and limestone soils. It is the place of origin of<br />the Vigna Ganger Pinot Noir Riserva.<br />Vinification and ageing<br /><br />The fully ripe grapes are harvested by hand in mid-September and delivered in small containers. The grapes - one fifth of which are vinified as whole clusters - are then<br />gravity-fed into steel vats where fermentation takes place (25 days). After the malolactic fermentation, the wine is matured in barriques for 20 months. Finally, the wine is<br />stored in the bottle for another 18 months.<br />Wine portrait<br /><br />Intense ruby red with aromas of ripe fruit, sour cherries, wild berries, raspberries and a slight hint of marzipan. The wine presents itself elegant and refined with good acidity<br />and spiciness. It has a filigree and at the same time complex structure as well as soft and balanced tannins. This wine elegantly accompanies main courses based on red<br />meat, roast meat and game. For over 20 years, the Sauvignon Sanct Valentin has<br />found first-class conditions in the carefully selected individual vineyards at the foot of the Mendelstock to produce a great top wine with captivating fruit, excellent minerality<br />and persistence. Today, this noble drop is not only the pride of the house and the most important wine of the Sanct Valentin line, but also one of the most awarded white<br />wines in Italy.<br /><br />Grape variety: Sauvignon<br />Vine age: 10 to 33 years<br />Growing area: Site: best vineyards in St. Michael and 'Eppan Berg' (450-650m)<br />Exposure: south-east<br />Soils: Calcareous gravel soils<br />Method of cultivation: Guyot<br />Harvest: Early to mid-September; harvest and grape selection by hand.<br />Vinification: The majority (75%) is fermented in steel tanks, where the wine is aged on the fine lees until the end of April. The beguiling Gewürztraminer is one of the most exciting growths in the wine<br />world. Characteristic of Gewürztraminer Sanct Valentin is its intense and complex bouquet with aromas reminiscent of oriental spices, delicate rose scents and exotic fruits.<br />The Gewürztraminer was first vinified in 1986 as the top growth of the Sanct Valentin line. In the best individual vineyards of the municipality of Eppan, however, the grapes develop so excellently that they<br />produce a high-quality, powerful yet elegant top wine. Since 1986, the Chardonnay has been part of the Sanct Valentin line and is one of the most important wines of the<br />house. Excellent balance, well-integrated acidity and excellent storage potential.<br /><br />Grape variety: Chardonnay<br />Vine age: 10 to 32 years<br />Growing region:<br />Site: selection of the best single vineyard sites in the municipality of Eppan (450-550m).<br />Exposure: south-east, south-west<br />Soils: sandy calcareous gravel soils (or calcareous gravel soils)<br />Method of cultivation: Guyot<br />Harvest: Late September to early October, hand harvest and grape selection.<br />Vinification: Fermentation, malolactic fermentation and ageing on the lees in barrique tonneaux. Per la produzione del Cabernet-Merlot Sanct Valentin vengono utilizzate solo uve<br />provenienti da vigneti particolarmente soleggiati. La resa è estremamente bassa e i vitigni vengono vinificati singolarmente. Il Cabernet-Merlot Sanct Valentin, prodotto per la<br />prima volta nel 2013, è un vino rosso di prima classe, estremamente complesso e con tannini fini.
