Four hectares are planted with Pinot Nero in this unique site: a south-<br />facing high plateau at 400 - 450 m above sea level, sunny and constantly exposed to the wind. Ideal conditions for the tightly berried Pinot grapes. The soil is sandy loam<br />and interspersed with various stones: Dolomite, porphyry, gneiss and granite can be found from small grains to fist-sized stones. La resa è estremamente bassa e i vitigni vengono vinificati singolarmente. Il Cabernet-Merlot Sanct Valentin, prodotto per la<br />prima volta nel 2013, è un vino rosso di prima classe, estremamente complesso e con tannini fini. Passito Comtess<br />Sanct Valentin 2021<br />Passito is the Italian term for wines that are made from air- and sun-dried, almost rosined grapes. This usually takes place in our vineyard, i.e. the grapes remain on the vine<br />until the end of the year. The elegant Passito Comtess delights with intense fruit, a creamy-soft body, with a long finish and flatters the palate with racy-fresh acidity. 2018 CHATEAU CROIX MOUTON 'BORDEAUX SUPERIEUR'<br />THE YEAR.<br />The M printed on the label of this fine-tasting and fleshy Bordeaux Supérieur wine marks the personality and particularities of each vintage and changes colour every year.<br />This cuvée from Château Croix Mouton, which dominates the Dordogne, is made exclusively from Merlot, the emblematic grape variety of the right bank of the Garonne, and<br />has a deep ruby red colour with beautiful shiny reflections. On the palate, small, acidic red fruits (mainly red plum, cherry) follow one another. On the palate it is full-bodied<br />and juicy, full of charming finesse. This wine is best appreciated when young, when its fruity bouquet shows all its vivacity.<br />THE CHÂTEAU CROIX MOUTON ESTATE<br />Château Croix Mouton is located in the town of Lugon on the right bank of the Bordeaux River and covers almost 70 hectares of vines. It is owned by the Janoueix family and<br />thrives on the clayey soil of Carney Island. The 2019 grape varieties focus on Merlot (96%), complemented by Cabernet Franc (2.5%), Malbec (1%) and Petit Verdot (0.5%).<br />The vines are on average 38 years old. The planting density is about 3,600 to 6,000 vines per hectare.<br />The work in the vineyard is meticulous and includes tillage, grassing, thinning and some leaf thinning. After sorting at harvest, vinification takes place in concrete and<br />stainless steel tanks with openings and regular puncturing. Fermentation takes place under temperature control (maximum 26-27 °C). The maturation period is between<br />three weeks and one month. Maturation lasts between three and four months on the fine lees in barrels (20%) and in vats with or without wood (80%).<br />The top Bordeaux produced by the estate are pleasant, fruity wines that tend to be drunk at a young age. Gourmet and fleshy wines that are also quite accessible.<br />

PIPA<br />PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a<br />long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in<br />Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the<br />Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer<br /><br />Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.<br /><br />Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the<br />marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in<br />bottle.<br /><br />Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The<br />strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable for<br />chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.<br />
