At Castellare, Chianti Classico is produced using only two indigenous grape varieties: Sangioveto, the prince of Tuscan vines, which makes up 90% of the blend, and the<br />remaining 10% of Canaiolo, another typical variety of the area. The true Chianti Classico, therefore, without the addition of international vines such as Cabernet or Merlot, in<br />order to maintain the authentic formula of the most famous of Italian wines while seeking maximum elegance.<br /><br />Tasting notes: the colour of this Chianti Classico is the ruby red of Sangioveto. The nose is fragrant, fresh with pleasant hints of red fruit, liquorice, currants and a light touch<br />of vanilla. The typical notes of Chianti Sangiovese dominate. On the palate it expresses a pleasant sweetness, is round, soft and savoury. Acidity and persistence<br />characterise a very elegant aftertaste.<br /><br />Pairings: A very versatile wine that also goes well with structured and important dishes. SOUTH TIROL DOC<br />LAGREIN RISERVA<br />VINEYARD KLOSTERANGER<br /><br />Our historic single vineyard: expressive, concentrated and straightforward.<br />IN THE VINEYARD<br />This Lagrein thrives at an altitude of 280 m in the middle of Gries. The historic vineyard is part of the monastery complex, where the vines stand on pure alluvial material from<br />the Talfer and a subsoil of Bolzano quartz porphyry. IN THE CELLAR<br />After fermentation and acid reduction in stainless steel, the wine is aged in new barrique barrels for 22 months, followed by harmonisation in enamelled steel tanks and<br />careful bottling after light filtration.<br />TASTING NOTES<br />The Klosteranger appears in deep garnet red and seduces with a bouquet of concentrated aromas. It is surprisingly lively and fruity on the nose with notes of coffee and<br />black berries as well as a hint of raspberries. On the palate, it convinces with grippy tannins, fresh acidity, delicate as well as elegant fullness and depth. Our single-vineyard<br />Lagrein is wonderfully complex, long-lasting and pampers the palate with a multi-layered structure. Description: Deep and concentrated fruit, aromas of blackcurrant, cocoa, cinnamon and vanilla as well as velvety tannins make up this full-bodied yet elegant cuvée.<br />Ageing potential: 10 - 15 years.<br />Recommended food: Meat dishes of all kinds, especially red meat and game dishes as well as mature cheese.<br />Serving temperature: 16° C.<br />Grape variety: 80% Merlot - 20% Cabernet. The sandy alluvial river soils in the closed heat-retaining Bolzano basin are characterised by<br />porphyry.<br />Climate: the Mediterranean climate is characterised by a lot of warmth from the south and very hot summers.<br />Vinification: the grapes of the GRIES Lagrein Riserva are harvested by hand. After destemming, the must ferments in steel tanks with gentle maceration. In this late harvest, the<br />aromaticity of Sauvignon vinified in stainless steel, the softness of Chardonnay and the finesse of Turbiana meet harmoniously with an exclusive result. The nose shows<br />notes of tropical fruit accompanied by a vegetality and minerality that enhance the finesse and elegance with a very communicative impact that induces salivation stimulating<br />the taste. On the palate it is rich with an exquisitely sweet attack followed by perfectly balanced acidity and flavour, and finally the fruity and mineral notes return.
