Pinot Nero DOP Revei Les...

Pinot Nero DOP Revei Les...

Maturation for 18 months in 700 L tonneaux. Bottled without filtration and stabilisation. Matured in bottle for 18 months.

Sensory notes: brilliant, ruby. Fruity nose (undergrowth, ripe red fruit) with cocoa notes. Savoury, pleasantly acidic on the palate with a fine structure and velvety tannin On
the palate soft and balanced. Long finish.

Accompaniments: braised veal cheek, seasoned Gressoney toma cheese, liver crostini, saffron risotto with ossobuco marrow.

Serving temperature: 14/16 °C.

Curiosity: Pinot Noir Revei, in patois 'clock', is linked to the history of the medieval tower that dominates our vineyard at Aymavilles. The tower was the home of a hermit
watchmaker, whose craft brought us back to the theme of time and its value, in nature and for man. In his creation, time plays a fundamental role from maturation to
refinement. Here, time is diluted to obtain, from grapes brought to optimum ripeness, the best expressive potential of the mountain Pinot Noir, skilfully matured in French
wood and which, once bottled, still rests in our cellars.
Barolo Ris. 2004 Borgogno...

Barolo Ris. 2004 Borgogno...

RESERVE 2004
Composed of three different Cru, Liste, Cannubi and Fossati, completely different from each other. The former, formed 11 million years ago by erosion of overlying soils, has
its own unique and complete composition of macro and micro elements, giving it complexity and longevity. Cannubi, on the other hand, was formed around 12 million years
ago by sedimentation from the Po Sea and is the most famous and renowned Cru of Barolo. It has an excellent terroir complexity, formed by large calcareous clayey marl
soils and a favourable climate that gives incredible elegance and longevity. Fossati was born about 10 million years ago, also by sedimentation from the Po Sea after the
earth plates of Africa collided with those of the Italic peninsula. Being a relatively young plot, it has a good percentage of sand in its composition that gives explosive floral
and red fruit aromas.
Barolo DOCG 2018 Cannubi...

CANNUBI 2018
Product name: BAROLO CANNUBI DOCG 2018
Grapes: 100% NEBBIOLO
Production zone: Barolo - MGA Cannubi
Exposure and altitude: south; from 290 to 315 metres above sea level;
calcareous clayey marls, slightly sandy
with a marked presence of silt
Soil type:
Training system: modified guyot (arch)
Plant density: 4,000 vines per hectare
Harvest time: 19 October
Alcoholic grade: 14.5%.
Serving temperature: 18 °C

Organoleptic characteristics
Intense ruby red with garnet hues. On the nose hints of red fruits, such as strawberry and cherry, and a light spiciness reminiscent of pepper. On the palate a fine wine, but
at the same time elegant and characterised by power. On the palate fullness, elegance and taut, persistent tannin, long and fine taste. Perfect pairing: Barolo par excellence
goes well with important dishes, such as traditional Piedmontese main courses of meat such as boiled meats and stews. Spanning the world's traditions, we find goulash in
Eastern Europe, entrecôte in France and reindeer stew, Poronkaristys, in Finland. In Norway, on the other hand, it can be combined with fårikål, a meat stew accompanied
by cabbage. Staying in Europe, Barolo goes well with a typical Greek dish, souvlaki, a skewer of meat and vegetables. Going to Japan instead, we think of gyoza (fried
dumplings filled with spring onion, marinated pork and spices). Moving to the United States of America, beef (angus, wagyu, ox nostral, longhorn) in the brisket cut. But if
you have the pleasure, even a simple 'special' toast is perfect!
