Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. Gewürztraminer Riserva 2021...
The demanding Gewürztraminer prefers warm, airy sites with deep, loamy soils. These conditions are found in the Brenntal vineyard in the north-west of the village of<br />Kurtatsch.<br /><br />The Gewürztraminer gets its multifaceted aromas from the red clay soils: lychee, roses, mango, caramelised orange peel and lavender. On the palate, the wine presents a<br />creamy texture and elegant acidity that balances the muscular body. The wine reaches its complexity after a longer ageing period in the cellar and in the bottle, which is<br />why the wine is only sold as a Riserva 2 years after the harvest. The ageing potential of up to 20 years is enormous.<br />Gewürztraminer BRENNTAL: the long-lived one.<br />Grape variety: Gewürztraminer<br />Vinification: Cold maceration for 3.5 hours, temperature-controlled fermentation in steel tanks; ageing and fine yeast storage for 12 months in stainless steel and for 6<br />months in large oak barrels, minimum bottle ageing of 6 months.<br />Alcohol: 15.0 % vol.<br />Total acidity: 5.6 g/l<br />Residual sugar: 6,8 g/l<br />Yield per hectare: 40 hl<br />Optimum age for drinking: 3-12 years<br />Method of cultivation: sustainable<br />Bottle size: 0,75 l<br />

<br /><br />The Chardonnay Freienfeld, a blend of the best Chardonnay grapes, is only pressed in vintages with optimal weather conditions. Originality and near-natural cultivation are<br />the guidelines in the vineyard.<br /><br />The Chardonnay is characterised by stylish opulence, with lots of exotic fruit and delicate, highly refined toasty aromas. The complex bouquet is reminiscent of ripe citrus<br />fruits, coconuts and a hint of vanilla. Extract and acidity form a delightful balance. The taste is round, with velvety fruit and pleasantly integrated tannin. Description: Intense straw yellow colour, fresh fine aroma reminiscent of yellow roses and nutmeg, some cloves and cinnamon, strong body, spicy, with lively acidity.<br />Ageing potential: 6-8 years.<br />Recommended food: As an aperitif, ideal companion to grilled fish, shellfish, Asian dishes and blue cheese.<br />Serving temperature: 10-12° C.<br />Grape variety: Gewürztraminer, trellis training with high plant density, approx. 5,500 vines/ha.<br />Sites: Selected sites at 450-550 m above sea level. Gravelly, sandy, partly loamy, medium-heavy soils with limestone deposits.<br />Vinification: Short cold maceration of the destemmed grapes, gentle pressing, fermentation at 18° C in stainless steel tanks.
