LOAM Cabernet-Merlot...

LOAM Cabernet-Merlot...

A rarity in the Alpine region are sites with a microclimate in which even red late varieties reach the stage of full ripeness. Loam Cabernet-Merlot owes its exceptional
character to the weather-protected location and the special nature and heat storage capacity of the soils of its vineyards.

Vintage description: the winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused an early and rather uneven budding in the well-
supplied soils. A cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity and a
lot of careful manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative
effects. A significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the
harvest. The harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are
characterised by particular elegance. The red wines present a lot of fruit and a lively tannin structure.

Grape variety: Cabernet Sauvignon (40%), Cabernet Franc (25%), Merlot (35%).
Yield: 45 hl/hectare
Altitude: 250 - 350 m
Soil: Clay with calcareous content
Age of vines: 15 - 25 years
Exposure: south-east 90 %, south 10
Climate: extreme interplay between sunny days dominated by the Mediterranean climate and night hours dominated by cold downdrafts from the surrounding mountains

Serving temperature 16-18° C
Residual sugar 0.7 g/l
Total acidity 5,4 g/l
Alcohol 14 % vol
Trento DOC Altemasi Brut...

Trento DOC Altemasi Brut...

Altemasi Rosé
TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined
bouquet of small fruits.

Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the
Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial
origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico
plateau, with a medium texture and well structured.
Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are
slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine
from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only
the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive
feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. On disgorging, a small
amount of 'liqueur d'expédition' is added.
Analytical data:
Alcohol: 12.50% vol.
Total acidity: 6 g/l
Net dry extract: 22 g/l
Residual sugars: 7 g/l
Contains sulphites
Tasting notes: A Classical Method sparkling wine, pale pink in colour with light copper highlights, creamy white mousse, fine and persistent perlage, complex bouquet with
fruity notes reminiscent of ripe cherries, redcurrants and red apples, a rich, well-balanced flavour with a very persistent aftertaste.Serving suggestions: Suitable as an aperitif,
but especially at table with soups and main courses of white meat or game.
Serving temperature: 8-10 °C
