Vinification
Harvest and grape selection by hand; gentle whole bunch pressing and clarification of the must by natural sedimentation of the lees; slow fermentation at controlled
temperature in large oak barrels (30 hl); partial malolactic fermentation (only the varieties Pinot Blanc and Chardonnay); ageing for 12 months on the fine lees in large
wooden barrels and presentation as 'Riserva' after a total of 2 years of maturity.

Character
Colour: intense, sparkling yellow-green
Nose: The aromatic structure of this cuvée presents itself with a multitude of facets. A hint of herbs and spices, such as anise, mint and sage, but also aromatic fruit
nuances, especially the scent of apricots, tangerines, honeydew melon, passion fruit and passion fruit, characterise the Terlaner. The overall impression is underlined by
mineral components.
Taste: Complex and delicate, the Nova Domus sparkles on the palate, where the powerful structure together with its mineral-salty tension creates an interesting symbiosis
and thus lingers for a very long time.
