Elegance and finesse are linked to the fruity and mineral bouquet.<br />Tasting Notes<br /><br />Persistent foam with minute fine-grain perlage. Straw yellow colour, with very faint greenish tinges. The demanding Gewürztraminer prefers warm, airy sites with deep, loamy soils. These conditions are found in the Brenntal vineyard in the north-west of the village of<br />Kurtatsch.<br /><br />The Gewürztraminer gets its multifaceted aromas from the red clay soils: lychee, roses, mango, caramelised orange peel and lavender. On the palate, the wine presents a<br />creamy texture and elegant acidity that balances the muscular body. The wine reaches its complexity after a longer ageing period in the cellar and in the bottle, which is<br />why the wine is only sold as a Riserva 2 years after the harvest. For the plum brandy from the Zu Plun distillery use is made exclusively of typical plums of South Tyrol farms, which are grown directly by Plunhof at about<br />1100 m altitude. The plums that grow in this climate characterised by strong temperature oscillations are small and compact, with a more concentrated aroma than common<br />fruits. It is this aroma that is expected to reveal itself to the full in the plum brandy, which is why the ripe fruits are cautiously stoned before further processing. The fruit thus<br />handpicked and prepared is carefully mashed. After natural fermentation without additives the pulp is distilled twice. <br />PEAR WILLIAMS DISTILLATE<br /><br />Pear Williams distillate. No other fruit type is more frequently distilled in our areas than the Williams pear - it is undisputedly the queen among more or less aromatic pip<br />fruit types. Williams is a favourite, although whoever tasted a glass of a true top quality distillate will find the large majority of common or garden pear brandies flat at best,<br />even artificial at worst. Top quality is seldom reached in the industry because substantial effort is required: the Williams pear for the Zu Plun distillate come from the<br />Burgraviato and lower Venosta area near Naturno. When they are picked they need to be much riper than the pears grown for eating. Only then do they release the<br />concentrated aroma which is captured in this distillate. Freshly picked and brightly coloured, these pears are immediately cored by hand in order to avoid unwanted bitter<br />tones, then mashed straight away: a labour-intensive process where time is of the essence. Exilissi<br />Gewürztraminer Riserva<br /><br />THE SCENT OF DREAMS<br />A wine like liquid light. And yet the essence remains invisible to the eyes, revealing itself only to the nose and mouth: the beguiling scent of roses in the vineyard awakens<br />the secrets of summer from their slumber and lingers on the tongue with sweet spice.<br /><br />VINIFICATION<br />Late harvest of the fully ripe, partially dried grapes, 20-hour cold maceration, fermentation in wooden barrels, ten months of ageing on the fine lees in large wooden barrels.<br /><br />SITUATION / SOIL<br />Höfl unterm Stein in Söll near Tramin, is a south-eastern slope situated at 480 to 550 m above sea level. Gold Muscat DOC 2021<br /><br />Vintage: the 2021 viticultural year was demanding and challenging in many respects. The winter months were predominantly sunny but decidedly cold. Temperatures rose<br />only hesitantly even in spring, slowing down the development phase of the vines. However, a warm and sunny start to the summer made up for this. August and July were<br />very varied, so the grape harvest started relatively late on 9 September. The rainy September was a great organisational challenge for our winegrowers, but finally the harvest<br />was completed on 26 October with a very good result.<br /><br />Tasting notes:<br />- bright yellow<br />- intense aroma of nutmeg, ripe peach<br />- juicy, full-bodied, with a pithy acidity, well balanced by the pleasant sweetness of the fruit.<br /><br />Recommendation: enjoy this sweet dessert wine with doughnuts, strudel and cake.<br /><br />Vinification: harvest of ripe and healthy grapes, destemming, cold maceration of 12 hours, pressing, natural must clarification, fermentation at a controlled temperature of 18<br />°C, 3-month ageing on fine lees in stainless steel.<br /><br />Vineyard: south and east-facing sites at 300 to 450 m above sea level; loamy limestone gravel, heat-storing and water-permeable.<br /><br />Grape variety: Goldmuskateller<br />Age of the vines: 5 - 30 years<br />Drinking temperature: 8 - 10 °C<br />Maturity: 2022 - 2024<br />Yield: 70 hl/ha<br />Method of cultivation: pergola + wire frame<br />Alcohol: 12,5<br />Residual sugar: 45,0 g/l<br />Acidity: 6,4 g/l<br />Contains sulphites<br />
