Born from the union of Sangiovese, traditionally used in Tuscan reds, with Cabernet<br />Sauvignon and Syrah, not widely used and known in the Maremma in 1988, all grown in the clay-limestone soil of Poggio dell'Avvoltore, this wine marks a milestone in the<br />Moris family's legacy of producing high quality wines in the Tuscan Maremma.<br /><br />TASTING NOTES:<br />Colour: ruby red with purple highlights<br />Bouquet: complex, with hints of ripe fruit and vanilla<br />Taste: full-bodied and soft, with a distinct velvety feel<br />Serving temperature: 18°C<br />Pairing: great roasts<br /><br />TECHNICAL NOTES:<br />Production area: Poggio dell'Avvoltore, Tenuta Poggetti, Massa Marittima.<br />Soil: clayey, rich in skeleton, tendentially alkaline.<br />Exposure: South-West<br />Yield per hectare: 35 ql. of grapes<br /><br />PRODUCTION NOTES:<br />Harvest takes place the second and fourth week of September and the first and second week of October. Fermentation in cement tanks, with temperature control and two<br />daily pumpings over for the first 10 days. The wine remains for a further 15 days in contact with the skins before being drawn off and immediately put into 225-litre barriques<br />(80% new), where malolactic fermentation takes place. Maturation in wood lasts about a year, during which time the wine is racked. The wine remains in the bottle for six<br />months before being put on the market.<br />

Altemasi Rosé<br />TRENTO DOC METODO CLASSICO Altemasi Rosé represents a harmonious union between the elegance of Chardonnay and the structure of Pinot Noir, for a refined<br />bouquet of small fruits.<br /><br />Area of production: The wines of this important cuvée come from Pinot Noir and Chardonnay grapes harvested in the high hillside vineyards around Trento and on the<br />Brentonico plateau at altitudes between 450 and 600 m above sea level, facing south and southwest. The Chardonnay is grown on soils that are mainly of fluvial-glacial<br />origin, of medium depth, tend to be calcareous and rich in skeleton. The soils chosen for the Pinot Noir are of volcanic origin, originating on the basalt of the Brentonico<br />plateau, with a medium texture and well structured.<br />Vinification and refinement:The grapes are harvested by hand and delivered in crates to the cellars where vinification takes place. Only the whole Chardonnay berries are<br />slowly pressed to separate the different fractions of must which, inoculated with selected yeasts, ferments at controlled temperatures in stainless steel tanks. The wine<br />from Pinot Noir is made using the 'submerged cap' system, which consists of leaving the must in contact with the skins until the first signs of fermentation begin; then only<br />the must is separated and fermentation continues in stainless steel at a controlled temperature. This allows us to obtain a soft, delicate colour from the skins, a distinctive<br />feature of Cavit's Trentodoc rosé. Foaming in the bottle takes place the following spring and the wine remains on the lees for at least 15 months. On disgorging, a small<br />amount of 'liqueur d'expédition' is added.<br />Analytical data:<br />Alcohol: 12.50% vol.<br />Total acidity: 6 g/l<br />Net dry extract: 22 g/l<br />Residual sugars: 7 g/l<br />Contains sulphites<br />Tasting notes: A Classical Method sparkling wine, pale pink in colour with light copper highlights, creamy white mousse, fine and persistent perlage, complex bouquet with<br />fruity notes reminiscent of ripe cherries, redcurrants and red apples, a rich, well-balanced flavour with a very persistent aftertaste.Serving suggestions: Suitable as an aperitif,<br />but especially at table with soups and main courses of white meat or game.<br />Serving temperature: 8-10 °C<br />
