Description:<br />Aroma of fully ripe wild berries and dark chocolate. Very dense and complex with fine tannins. Elegant Merlot with very good ageing potential.<br />Ageing potential: 6 - 8 years.<br />Recommended food: Goes well with hearty roasted or grilled meats with root vegetables and spicy dark sauces, as well as game dishes and cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Merlot. The grapes come from 20-year-old trellised vineyards with a planting density of approx. 5,000 vines/ha.<br />Sites: Sun-exposed slope. Extremely dry and heat-retaining quartz porphyry weathered soil that only allows low yields.<br />Vinification: Must fermentation at 28-30° C in stainless steel tanks. Gentle circulation of grape skins and juice is used to achieve optimal extraction of colour and extract substances. Further ageing takes place entirely in small wooden barrels for about 12 months. After gentle filling and 12 months of bottle ageing, the wine is put on sale.<br /><br />

<br />Gries<br />South Tyrol Lagrein Riserva DOC<br /><br />Description: a wine of almost violet colour and dense aromas of violets, blackberries and sour cherry, paired with light roasted aromas like coffee and chocolate. A powerful and supple wine with still youthful tannins.<br /><br />Ageing potential: 8 - 10 years.<br /><br />Recommended food: its powerful body makes this wine a pleasant companion to dark meat, game, poultry and piquant hard cheeses.<br /><br />Serving temperature: 16° C.<br /><br />Grape variety: Lagrein; 15-year old trellis system<br /><br />Sites: the vines are planted in the classic growing area in Gries near Bolzano on deep, warm and sandy alluvial soils, granite and porphyry as the original rock; very favourable microclimate in the Bolzano valley basin, very warm days, cooler nights.<br /><br />Yield: 49 hl/ha<br /><br />Vinification: Fermentation on the skins for 15 days, followed by gentle maceration.<br />Racking of the young wine into large wooden barrels for biological acid reduction. Subsequent ageing in small wooden barrels for 16 months; gentle coarse filtration before bottling. Subsequent bottle ageing for 10 months.<br /><br /><br />

Description<br /><br />Very deep violet/black colour. Highly dense bouquet, chassis, blackberries. Very powerful yet elegant attack, densely concentrated tannins on the palate, powerful backbone and enormously long finish.<br /><br />High ageing potential: 10-15 years.<br /><br />Recommended food: Goes well with strong dishes with red meat, grilled or roasted, but especially with game and with spicy cheeses.<br />Serving temperature: 16° C.<br />Grape variety: Cabernet Sauvignon.<br />Sites: The vineyard site is located at an altitude of 430 m above sea level with optimal sun exposure. A rather dry site, with sandy, gravelly moraine soil.<br />Vinification: Maceration for 10 days with gentle circulation of the marc followed by maceration for a further 10-14 days. Racking of the young wine into new/used barriques, malolactic fermentation, several transfers of the wine during the 18 months of ageing. Gentle coarse filtration before bottling.<br /><br />

The wine is then gently drawn off.<br />The wine is then gently drawn off into barriques, malolactic fermentation and further<br />further ageing for 12 months in oak barrels, some of which are new and some of which have been filled several times.<br /><br />
