LO SGOCCIOLATO 500ml<br /><br />The Extra Virgin Olive Oil 100% Italian Lo Sgocciolato, is produced in limited quantities and obtained exclusively by natural cold dripping from 100% Moraiolo olives,<br />harvested by hand in the period from 25 October to 15 November. It is extracted only with the 'Sinolea' machine, which manages to obtain oil without production stress. Laudemio Frescobaldi 2022<br />Italian Extra Virgin Olive Oil<br /><br />For 700 years, the Frescobaldi family has lovingly cultivated over 300 hectares of olive groves between 200 and 500 metres above sea level, where the microclimate gives the<br />olives unique characteristics in terms of freshness and intensity of aromas and flavours. In autumn, the olives are harvested early, before ripening, to capture their emerald<br />green colour and aromatic freshness. The olives are always pressed within a few hours of harvesting, in the estate's own mill in Castello Nipozzano. These rules guarantee<br />absolute quality excellence. Finally, Frescobaldi carries out a strict selection process and only the extra virgin olive oil with the best organoleptic characteristics is selected<br />to become Laudemio Frescobaldi.<br /><br />Climatic trend<br />Summer 2022 will be remembered as a decidedly hot and sunny season. The olive tree, a Mediterranean plant par excellence, strongly benefited from both high average<br />temperatures and long sunny days. The fruit set at the beginning of June was abundant and continued with luxuriant growth throughout the summer. Rainfall was scarce in<br />June and July, becoming more abundant from the second half of August, which allowed the plants good rehydration in the crucial phase of the start of oil accumulation in the<br />olives. From September to the beginning of the harvest, average temperatures began to fall with a wide temperature range between day and night, which stimulated the<br />development of polyphenols and aromatic substances that characterise the great oils of central Tuscany. Harvesting and pressing began on Monday 10 October.<br /><br />Tasting notes<br />Laudemio Frescobaldi 2022 has a strong and pungent character. The colour is intense, emerald green. The aromas recall the fruit from which it comes, a freshly picked and<br />crushed olive. On the palate, the bitterness and spiciness combine in a balanced manner, and typical Tuscan flavours such as artichoke and wild rocket emerge. In the<br />mouth it is very clean and astringent with a long, pungent persistence.<br />

A product of high gastronomic quality, obtained from the simultaneous cold pressing, using entirely artisanal techniques, of selected olives of the Gentile di Chieti variety<br />and fresh lemons.<br />Lemon oil should not be considered a flavoured oil or a sauce of oil and citrus fruit, as the production process is unique and singular, resulting in an elixir of oil to which the<br />aromatic essences contained in the lemon peels give a fine and elegant fragrance.<br />This oil contains no added essences or other types of additives and has not been filtered, only naturally decanted.<br />It can be used in vinaigrettes and for seasoning meat and fish. It is excellent for seasoning marinated blue fish, crustaceans and molluscs and for desserts that require the<br />use of lemon peels. Refined in the preparation of first courses.<br />
