The ageing time follows the rhythms<br />of nature: 18 months pass from moon to moon.<br /><br />The perfume becomes intense, more ethereal and harmonious, the taste loses its initial sharpness and rounds off to give an elegant and silky mouthfeel. This very sharp tip<br />accompanies the heart of the raw material, which is revealed with fruity aromas of jam, fruit in syrup, baked apple, prune, sultana, almond and walnut. This is followed by a<br />hint of flowers and honey. Its extremely deep colour heralds that aromatic power and softness that are later found during tasting.<br />It is a dry and austere distillate, which does not indulge in cloying notes: the aromatic profile is dominated by spices (cloves, pepper, nutmeg, aniseed, liquorice, tobacco)<br />and hints of the barrique. However, the scents of the raw material used are not covered, but are instead accompanied by notes of plum, candied fruit and dried fruits such as<br />hazelnut and almond.
