Clay soil, rich in nitrogen and potassium.<br /><br />DISTILLATION: Before making the cider, the apples are blended and pressed, washed and treated to extract the pulp of the fruit on the one hand, and the must on the other,<br />which must macerate for at least 6 weeks before being bottled.<br /><br />COLOUR: Dark amber<br /><br />BOUQUET: The bouquet is rich and fleshy, with hints of spices, honey, cinnamon and dried fruit.<br /><br />PAIRINGS: Excellent if drunk alone, surprising if paired with very strong cheeses, and exceptional with quality dark chocolate<br /><br />TASTE: The taste is truly amazing, with a unique aromatic intensity and extreme length.<br />
