Grappa Stravecchia is emblematic of the culture, care and art of distilling. Obtained from the distillation in Bain-Marie in a discontinuous still of both red and white pomace. It<br />is matured in small barrels of Cherry, Ash, Oak and Robinia, each giving its own characteristics of perfume, aroma, colour and flavour. The ageing time follows the rhythms<br />of nature: 18 months pass from moon to moon.<br /><br />The perfume becomes intense, more ethereal and harmonious, the taste loses its initial sharpness and rounds off to give an elegant and silky mouthfeel. The colour reaches<br />a warm amber tone. The Master Distiller follows its maturation until it reaches the ideal blend and full harmony between wood and Grappa. On the nose hints of red fruits, such as strawberry and cherry, and a light spiciness reminiscent of pepper. On the palate a fine wine, but<br />at the same time elegant and characterised by power. On the palate fullness, elegance and taut, persistent tannin, long and fine taste. Perfect pairing: Barolo par excellence<br />goes well with important dishes, such as traditional Piedmontese main courses of meat such as boiled meats and stews. Spanning the world's traditions, we find goulash in<br />Eastern Europe, entrecôte in France and reindeer stew, Poronkaristys, in Finland. In Norway, on the other hand, it can be combined with fårikål, a meat stew accompanied<br />by cabbage. Staying in Europe, Barolo goes well with a typical Greek dish, souvlaki, a skewer of meat and vegetables. Going to Japan instead, we think of gyoza (fried<br />dumplings filled with spring onion, marinated pork and spices). Moving to the United States of America, beef (angus, wagyu, ox nostral, longhorn) in the brisket cut. But if<br />you have the pleasure, even a simple 'special' toast is perfect!<br />

Finish with return of salty tones.<br /><br />CURIOSITY<br />Produced from 5 cru vineyards in Barolo: Liste, Cannubi, Fossati, Cannubi San Lorenzo, San Pietro delle Viole. Spontaneous fermentation without added yeasts in cement<br />tanks, with subsequent submerged cap maceration for at least 30 days at a temperature of 29°. After racking, malolactic fermentation is triggered, about 15 days at a<br />constant temperature of 22 C. The frost night in May and the hailstorm in<br />August put the vegetation in the vineyard to a hard test. Nevertheless, thanks to the wonderful autumn weather with warm days and cold nights the harvest went very well.<br />2019 is a vintage that reflects our terroir. The wines present themselves very fruity and typical of their variety, with fresh and pleasant acidity. - summarizes our winemaker<br />Celestino Lucin. All in all, 2019 presents itself as an exceptional vintage with lower quantity but convincing levels of quality.<br />
