Bold yet delicate on the nose, it is redolent of ripe cherries, cassis and prunes; hints of milk chocolate, rhubarb<br />and balsamic mentholated tobacco also come through, creating an exquisitely refined, harmonious and elegant bouquet. Tonic and juicy on the palate, it is a ripe, full-bodied<br />wine with extremely lively tannins; an invigorating citrus note perfectly balances its high alcohol and helps make this big wine a most enjoyable drink.<br /><br /><br />Recommended food pairings<br /><br />Amarone is made from dried grapes and is therefore a concentrated, round and powerful wine, an elixir of long life. After a few years of bottle ageing, it becomes an excellent<br />complement for luxurious dishes such as jugged hare, roast turkey with truffles, braised beef in red wine, Amarone risotto. Description: very intense fruity notes reminiscent of elder, acacia flowers and sage; combined with fine wood aromas; a wine with pithy acidity and a persistent finish.<br />Ageing potential: 6-10 years.<br />Recommended food: Ideal accompaniment to herb and fish dishes. Spicy white meat dishes and fresh cheese.<br />Serving temperature: 12 - 14° C.<br />Grape variety: Sauvignon blanc.<br />Sites: The vineyards are located on a rather dry site with optimal sun exposure and a sandy, gravelly moraine soil.<br />Vinification: After a short maceration period, the fully ripe grapes are gently pressed. Half of the must ferments in stainless steel vats while the remaining part is matured in wooden barrels/barriques. Only this second part undergoes partial malolactic fermentation. TYPE: Valle de Colchagua DO - ' Cabernet '.<br /><br />PRODUCTION AREA: Colchagua Valley - Peralillo<br /><br />VINE: Cabernet Sauvignon 100%.<br /><br />SOIL TYPE: Soil of volcanic origin, made up of sandy-clayey soil and granite sand.<br /><br />AGE OF THE VINEYARDS: at the beginning of the '90s important replanting works were carried out, the vineyard is subdivided into two parts: the first one is in the middle of<br />the vineyard and the second one is in the middle of the vineyard.<br /><br />VINIFICATION: vinification is carried out according to the traditional Bordeaux method. The grapes are placed in stainless steel tanks for fermentation at a controlled<br />temperature between 25° and 27°C. This is followed by 10-15 days of maceration, during which several repassings are carried out to allow a delicate extraction of the<br />phenolic compounds. The wine is then left to mature for three months in stainless steel tanks to obtain its unique fruity style.<br /><br />COLOUR: intense ruby red<br /><br />BOUQUET: in addition to the typical and varietal herbaceous notes, which are otherwise fine and elegant, the nose displays hints of plums, cherries and small red fruits,<br />followed by spicy and vanilla nuances.<br /><br />PAIRINGS: Perfect with savoury first courses and grilled red meats, this wine is ideal with mature cheeses. Excellent with roast guinea fowl.<br /><br />FLAVOUR: full-bodied and velvety on the palate, with soft and well-integrated tannins.<br />
