RIVIERA<br />This is the spontaneous juniper of the Maremma coast. With a savoury taste, it is influenced by the volcanic soil, the altitude of 200 metres and the sea wind. PH 6.4. 25%<br />of the blend.<br /><br />ALCOHOL CONTENT<br />45° balances each cocktail.<br /><br />CHIANTI<br />This is the juniper harvested in the Chianti hills. Thanks to its altitude of almost 600 metres above sea level, it is the juniper with the most balsamic notes. PH 8.3. 10% of<br />the blend.<br /><br />DISTILLATION<br />This takes place at low temperature in a discontinuous copper pot still. This is followed by two months' rest before bottling.<br /><br />VALTIBERINE<br />This is our high altitude juniper. It is in fact those almost 800 metres, combined with the area's loamy and sandy soil, that give it its unmistakable hint of balance and<br />sobriety. It is the most common juniper in our blend. PH 7.7. 65% of the blend.<br /><br />TASTING NOTES<br />As clear as any good London Dry Gin, it surprises the nose with a strong scent of wild juniper immediately softened by dog rose and herbaceous hints of helichrysum. In the<br />mouth, the juniper explodes overbearingly, to which is added the rose and the balsamic note of helichrysum. Immediate is the spicy coriander which fades into a persistent<br />finish of slightly citrus notes.<br />

A rarity in the Alpine region are sites with a microclimate in which even red late varieties reach the stage of full ripeness. Loam Cabernet-Merlot owes its exceptional<br />character to the weather-protected location and the special nature and heat storage capacity of the soils of its vineyards.<br /><br />Vintage description: the winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused an early and rather uneven budding in the well-<br />supplied soils. A cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity and a<br />lot of careful manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative<br />effects. A significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the<br />harvest. The harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are<br />characterised by particular elegance.
