Ripassa Valp. DOC 2020...
Ripassa Valpolicella Ripasso DOC Superiore

Immediately after the fermentation of the Amarone raisins, the best selection of Valpolicella 'ripassa' on the Amarone marc, starting the second short fermentation; in this way the alcohol content increases and a product richer in colour, extracts and aromas is obtained.

After ageing in French oak tonneaux for 18/20 months, it is then left to rest in the bottle for 6 months.

The result of this process is a refined and concentrated wine, extremely soft and velvety, with intense aromas of small red fruits.

Ripassa offers fruity scents and fine tannins on the palate, with an aura of chocolate and spices. It represents one of the most significant wines in Zenato's oenological evolution.

Grape varieties: 85% Corvina Veronese, 10% Rondinella, 5% Corvinone.
Geographical location and characteristics of the vineyard: hilly area of Valpolicella, south-eastern and south-western exposure.
Average altitude of the land: 250-300 metres above sea level.
Soil type: predominantly cretaceous, calcareous
Training system and planting density: guyot, with about 5,000 vines per hectare.
Average age of vines: 10/15 years old
Number of buds: 8/10 per plant
Yield per hectare: 100 quintals
Harvest time and method: first and second ten days of October. Manual harvesting.
Vinification: The grapes are destemmed and macerated in stainless steel fermenters for 10-12 days. After alcoholic fermentation, the new wine is separated from the skins by means of a soft press and stored in steel tanks until January, when the dried grapes are pressed to produce Amarone. At this point, the Valpolicella is 'repassed' on the Amarone marc with a 7-8 day period at a temperature of 25-28°C. This is followed by 18 months of refinement in tonneaux and a few months of bottle ageing in temperature-controlled environments.
Colour: deep ruby red.
Bouquet: intense, fine and persistent, with hints of black cherry and plum.
Taste: harmonious and velvety, with good structure.
Serving temperature: 18°C
Food pairings: an excellent companion to game dishes, grilled meats and roasts, cured meats and mature cheeses.

Stoan 2023 Cuvèe weiss...
Stoan is a unique wine that reflects the richness and potential of our terroir. A lively blend of Chardonnay, Sauvignon, Pinot Blanc and Gewürztraminer, the brainchild of our winemaker.

Description of the vintage: After a dry winter and an initially cold March, above-average spring temperatures favoured early budding and early flowering. From mid-May to early June the weather was mainly rainy and wet. In the later maturation phase, rainfall was normal, with few heat peaks and concomitant short dry periods. Throughout the summer the nights were characterised by pleasant coolness. Harvesting began in early September and until mid-October was interrupted repeatedly by single days of rain, fortunately alternating with prolonged periods of sunshine. The white wines are fresh, with an intense olfactory profile. The red wines, with great finesse and elegance, indicate great ageing potential.
Grape variety: Chardonnay 65%, Sauvignon 20%, Pinot Blanc 10%, Gewürztraminer 5%.
Yield: 45 hl/ha
Altitude: from 400, more from 500 - 600 metres
Exposure: south-east 90%, south 10%.
Harvest: end of September - mid-October
Bottles produced: about 48,000, 760 magnums and some large sizes
Soil: calcareous gravel mixed with clay
Age of vines: 10 - 40 years
Climate: wide temperature range due to hot days influenced by the Mediterranean climate and cold nights with very fresh winds coming from the mountains

Vinification: the grapes are harvested entirely by hand and placed in small containers that keep them intact; immediate pressing; slow fermentation at a controlled temperature (18°-20°) in wooden barrels (30-40 hl), in which malolactic fermentation also takes place; racking of the must by natural sedimentation.

AGING: Refining in large wooden barrels (30-40 hl), always in contact with the yeasts until the end of August. After bottling, the wine is left in the bottle for a minimum of 3 months for further ageing, bringing the total ageing period to a minimum of 14 months.
to a minimum of 14 months.

Alcohol content: 13,5 % vol.
Total acidity: 5,9 g/l
Residual sugars: 1.8 g/l

LOAM Cabernet-Merlot...
A rarity in the Alpine region are sites with a microclimate in which even red late varieties reach the stage of full ripeness. Loam Cabernet-Merlot owes its exceptional
character to the weather-protected location and the special nature and heat storage capacity of the soils of its vineyards.

Vintage description: the winter ended with abundant snow in the mountains. Warmer temperatures in March and April caused an early and rather uneven budding in the
well-supplied soils. A cool May then delayed the flowering. In humid and hot June, a high fungal disease pressure developed, which could be contained through sensitivity
and a lot of careful manual work. The rest of the summer was largely dry and was only interrupted by short, heavy thunderstorms. Two hot spells had practically no negative
effects. A significant drop in the lowest temperatures began in mid-August. High temperature differences between day and night characterised the weather throughout the
harvest. The harvest took place about 14 days later than in the previous year. The white wines of the 2019 vintage show an impressive freshness, Gewürztraminer are
characterised by particular elegance. The red wines present a lot of fruit and a lively tannin structure.

Grape variety: Cabernet Sauvignon (40%), Cabernet Franc (25%), Merlot (35%).
Yield: 45 hl/hectare
Altitude: 250 - 350 m
Soil: Clay with calcareous content
Age of vines: 15 - 25 years
Exposure: south-east 90 %, south 10
Climate: extreme interplay between sunny days dominated by the Mediterranean climate and night hours dominated by cold downdrafts from the surrounding mountains

Serving temperature 16-18° C
Residual sugar 0.7 g/l
Total acidity 5,4 g/l
Alcohol 14 % vol
