Pipa XXIII vino liquoroso...

Pipa XXIII vino liquoroso...

PIPA
PIPA is the exotic wine in our range. PIPA is a fortified wine - vino liquoroso, inspired by port wine. This first South Tyrolean 'port' is vinified from Lagrein grapes and is a long-lasting and complex dessert wine produced along the lines of a vintage Ruby. The name 'PIPA' comes from the typical oak barrels in which the port wine is stored in Portugal. 'After a trip to the Douro Valley in Portugal, I wanted to try my hand at making a port wine myself: I wanted to capture and preserve the typical cherry notes of the Lagrein during fermentation. After several experiments, I was able to refine and perfect the process.' FranzGojer

Site: Auer: Stony alluvial soil of the Etsch river. The warm porphyry is ideal for the grape variety. Guyot cultivation with 5,000 vines per hectare.

Vinification: Hand harvest and gentle processing. Cold maceration and fermentation in open oak vats with light toasting. Intensive extraction by continuous immersion of the marc cap in the must. Addition of brandy to the fermenting must to kill the yeasts and stop fermentation. Ageing in PIPA oak barrels for 6 months. Bottling and ageing in bottle.

Sensory characteristics: Intense garnet red with violet nuances. Smells wonderfully and intensely of fully ripe cherries and wild berries, Full-bodied and fine in the mouth. The strong tannin and the juicy acidity act as an ideal counterpart to the sweetness and thus form a complex taste picture. The long, fruity finish flatters the palate. Suitable for chocolate desserts of all kinds, the more intense and noble the chocolate, the better the combination.

South Tyrolean Venison...

South Tyrolean Venison...

Our goulash has never been in such demand as it is today. Today, when time is so short, people like to reach for ready-to-eat products, especially if their quality underpins
the decision they have made.

We are probably the only manufacturers who produce completely without preservatives or colourings. We achieve the shelf life by sterilisation with pressure and counter-
pressure. We have been using this method of preservation since the beginning of the last century. Of course, this requires a rigorous quality of the raw material, i.e. the
venison, as well as the various other ingredients.

Even the empty can is state of the art, such as the enamelled inner coating, the practical tear-off lid, etc.

The target group of our consumers has expanded to include almost all age groups these days. Our cans are especially interesting for students, singles, seniors and also
housewives with family - according to the latest trend also for parties and celebrations. The product is very easy to handle and ready to serve after a short heating.

Ingredients: Venison (farmed) 55 %, meat stock (water, beef, double concentrated tomato paste, roasted onion, potato starch, WHEAT FLOUR, soya and sunflower oil, salt,
spices, natural flavours). No additives, no lactose.

Enjoy your meal!

Nutritional values per 100 g
Calorific value 86 kcal / 363 kJ
Fat 3 g
thereof healthy fatty acids 0,8 g
Carbohydrates 2,8 g
thereof sugar 0 g
Protein 12 g
Salt 0.79 g
SONNTALER
South Tyrol Vernatsch DOC Old Vines
300-400 m a.s.l., east, steep and sloping site
Large day/night temperature differences
Red sandy-loamy soils with dolomite, porphyry and clay minerals
Alcohol: 12.5 % vol.
Total acidity: 4,8 g/l
Residual sugar: 1,9 g/l
Yield per hectare: 75 hl
Optimum age for drinking: 2-4 years
Method of cultivation: sustainable

Grape variety: Vernatsch
Vinification: Temperature-controlled fermentation of the must in steel tanks, malolactic fermentation and ageing in large oak barrels.
About the wine: Vernatsch SONNTALER is a blend of our oldest vineyards. The vines are between 60 and 90 years old. Old vines naturally produce low and therefore very
high quality yields. Traditionally, the SONNTALER is a blend of different Vernatsch varieties with a high percentage of Grauvernatsch. The ideal terroir and the traditional
ageing in large Slavonian wooden barrels give a wine with a complex aroma of raspberries, wild strawberries, cherries and red currants. The elegant, slender body is
gripping on the palate. Fine-grained tannins give the smooth, varietal fruitiness a long and hearty finish. SONNTALER: the classic.

Vernatsch is considered the lightest red wine variety in the world, which is why the drinking temperature is particularly important: we recommend 13°C!
