Pinot Noir is not only one of the oldest grape varieties, it is also one of the noblest. At home in South Tyrol for over 150 years, it is now one of the most appreciated red
wines. Thanks to the saignée method (gentle juice extraction from the mash), we obtain an excellent must from which we vinify a fresh, fruity rosé with stimulating acidity.

Variety description: Pinot noir
Site: various vineyards in the municipality of Eppan
Exposure: south, southeast, southwest
Soils: moraine rubble and limestone gravel soils
Method of cultivation: Guyot
Vine age: 10 to 30 years
Harvest: End of September; harvest and grape selection by hand.
Vinification: Must extraction by saignée. (Juice extraction from the mash)
Fermentation and ageing in steel tanks.
Yield: 55 hl/ha

Recommended consumption: This refreshing summer wine goes wonderfully with Brettljause, but also with pizza and pasta or, for example, with guinea fowl breast stuffed
with wild garlic. Chilled, it also goes very well with fish dishes.
