We didn't want to smother the fresh, muscular peat of this young single malt from Islay with too much wine, so we chose a finish of just one year in new Pedro Ximenez
casks. The first olfactory impression confirms that it is not at all vinous: the interaction with the casks has only accentuated certain qualities of the distillate, providing a
curiously contrasting juxtaposition of buttery notes with more acidic ones, reminiscent of balsamic vinegar. Apart from that, it is a very medicinal whisky: peaty in the tarry
sense, rather than ash-oriented. The richer ash and vegetable side of the smokiness only reveals itself on the palate: again slightly buttery, but overall rather herbaceous and
dry. The finish is a long, powerful crescendo of peat smoke, dry and taut.
