Lodovico Campari, passionately balsamic.
Lodovico Campari balsamic vinegar of Modena is the result of years of great care and preparation; nowadays it still stands in over 1.000 durmast casks, "disturbed only in autumn, when a little quantity is taken from each cask and bottled.
The rincalzo consists in adding to each cask a little quantity of simmered must, obtained from pressing Trebbiano grapes gathered at the time of the maximum rpiening. The must is boiled outside in the traditional copper containers.
Year after year, rincalzo after rincalzo, the precious liquid takes from the casks the typical flavour and aroma that make it unmistakable and turns bright brown. Thanks to this colour, its special creamy consistency and the strong contrast between the initial sweet component and the final acidulous one, the Lodovico Campari vineagar is one of the jewels of the history of Modena.
It is enough to add some drops of traditional balsamic vinegar to enhance vegetables, cheese, meat, strawberries and vanilla ice-cream.
