Characteristics:
ORIGIN: Our situated vineyards in Paderno Franciacorta, Rodengo Saiano, Erbusco and Cologne.

VINE AND VINIFICATION: Franciacorta Brut D.O.C.G. is born at clonal selections of grapes Chardonnay, white Pinot and black Pinot. It harvests grapes to hand in little cases, very slow and soft pressing of the whole bunches. Fermentation checked to 17° - 19° with native yeasts where for keeping integrally the taste and the perfumes of the Franciacorta. Maturation in basins from inoxidizable steel. In the March and April the passage is made in bottle for the foam catching. The bottles are piled up in refinement premises to checked temperatures (12° - 14°) for at least 25 months. Slip such a period Franciacorta Brut D.O.C.G. assumes his characteristics of perfume and taste, and with the thinnest perlage. It goes on then to the final phase of remuage degorgement and clothes for the forwarding.

ORGANOLEPTIC CARACTERISTICS: Yellow colour of good charge with green reflexions, perlage the thinnest and persistent. Aroma purpose and complex, dry taste with acidulous vein and characteristic, elegant and full nerve to the taste.

ALCOHOL: 12 - 12,5 % vol.
TOTAL ACIDITY: 6 - 6,5 %.
