Grape variety 70% Chardonnay and 30 % Pinot Nero.
Production area The highest hilly areas most suited to sparkling wine production in Trentino - hillsides surrounding Trento, Brentonico plateau and the Lakes valley. Loose, not so deep soils made of volcanic, fluvial and glacial deposits
Vinification The grapes are collected in special small crates, vinified using the method for white wine and matured in stainless steel tanks and barriques. The secondary fermentation in the bottle is followed by a period of at least 48 months on the lees. Dégorgement is then carried out.
Description Persistent foam, extremely fine grain, persistent perlage. Golden colour with greenish tinges. Complex refined nose, reminiscent of honey, ripe apples and hazel nuts. Full on the palate, elegant, well-balanced, with excellent backbone Matching with food Ideal as an apéritif, with smoked salmon and rabbit terrine.
