Raw milk cheese with herbs - Neuhaushof Ahornach, approx. 6 weeks matured, well spicy in the taste.
The nose evokes ripe red and black fruits: sweet berry and cherry fruits are enveloped in the bright ruby red robe of this wine, following on to a palate full of ripe red cherries and spice, a merest hint of smoke and gentle but pleasant tannins that all mingle to produce a great and satisfying wine. Enjoy at optimum maturity from summer 2011 to the end of 2016; will keep well until 2019. Serve: just below room temperature, at 60 - 64 °F; it will benefit from decanting in its youth and savoured from Burgundy glasses. Makes an excellent partner for slices of milk-fed lamb, roast salmon with a salt and soy sauce crust, roast duck and morello cherry sauce and mature soft cheese.
Veal sausages have also found in the South Tyrolean kitchen their firm place and are generated after Old-Bavarian recipe. Traditionally it is enough to warm up the veal sausages in hot water and to serve with sweet mustard and a lye pretzel. In addition a Bavarian wheat beer tastes especially well. However, they also enrich records with "cooked Mixed" and Bozner sauce.
Perfect served chilled, ideal as an ingredient in cocktails, long drinks, over ice cream or fresh fruit, and as a sorbet.
