Villa Novare Ripasso Valpolicella Classico Superiore doc
Ripasso di Villa Novare is an intense, warm and friendly wine, supple and fruity. It is produced by the technique of refermenting Valpolicella on the skins of Amarone and Recioto, to which Bertani adds a small quantity of semi-dried grapes to make the wine’s fruity notes more intense and to give it added suppleness and freshness. This is a new interpretation of a traditional technique born of Bertani’s skill and culture. Undoubtedly a versatile wine in terms of the dishes it can accompany, since with its combination of fruit, suppleness and consistency it can play a variety of roles.
Grape varieties: Rondinella and Corvina Veronese. The vines are cultivated using “spalliera” method. The pruning is making using “Guyot” method with a density of 5.000 bases/ha.
Area of production: The grapes comes from the Villa Novare estate, in the heart of the Valpolicella Classica. The estate takes place in a hollow close in the northern part and open southwards. The soil of the eastern side is of marl-calcareous composition while in the western side a modest stratum of agrarian soil covers slabs of calcareous stone.
Vinification: 1° fermentation: The manual harvest takes place at the end of September. The grapes are picked from the bunches and pressed, then let in steel tanks with a fermentation temperature of 18/20°C for about 3 weeks. These tanks are right to increase the contact between grapes skins and must. 2° fermentation called “ripasso”: It begins in March. The wine is drawn and refermented on the pomaces of Recioto and Amarone. This pomaces have a good sugar content that with still active yeast, make the wine refermented. In this wine there is an addition of raisins. This involves an intense refermentation of Valpolicella at low temperatures of 15/18°C for about one week.
Ageing: It ages in Slavonia oak casks, of 8 to 30 hl capacity, for 15 months.
Organoleptic characteristics: Purple red intense colour. At the nose scents of plum, cherry and black berries with a sweet spices and chocolate.
