Denominazione di origine controllata e garantita (DOCG) ORIGIN Made with selected grapes from the vineyards of La Fuga estate located in the Montalcino area at an altitude of approximately 400 meters a.s.l. GRAPES Sangiovese: 100%. Vineyard density: 4000-5500 plants per hectare. Yield per hectare: an average of 6-6.5 tons of grapes. Yield of grapes into wine: 65%. VINIFICATION AND MATURATION Grape harvest: when fully ripened during the month of October. Vinification: takes place in La Fuga Cellar. Alcoholic fermentation: in stainless steel wine tanks at a controlled temperature of 28°C. Maceration on the lees: approximately 15 days. Malolactic fermentation: in wooden containers. Ageing: 36 months in 30-40 hectoliters Slavonian oak casks. Bottle ageing: minimum 12 months. SENSORY EVALUATION Colour: deep ruby red tending toward violet. Bouquet: intense red berries with scents of leather of incense. Flavour: clean to the palate and austere also in the aftertaste, with moderate tannins. Serving temperature: 20-21 °C. Accompanies all types of meat, game and aged cheeses.
